Why should I make my own crunchy muesli?

Anyone who pays attention to their diet and health has long given cornflakes or muesli from the supermarket shelf a wide berth.

Which cereals fit into DIY muesli?

I recommend you Fine leaf oatmeal* to use. They are much more tender, smaller and, in my experience, crispier than large flakes.

Good alternatives for oatmeal are:

  • Rice flakes,
  • Emmer flakes,
  • Barley flakes,
  • Quinoa flakes,
  • Amaranth flakes.

If you have problems with gluten, you can gluten-free oat flakes perish.

Dried fruits for granola

Plums, dates, raisins, apricots, cranberries, figs, apples or bananas - what do you fancy?

It is important that you only mix the dried fruit into the crunchy muesli after baking/heavily frying. Otherwise they will become rock hard, some will burn and will no longer be edible.

I find freeze-dried fruit particularly tasty. However, I only add them to the muesli just before eating. This keeps them nice and crunchy and aromatic.

Sweetness for your crunchy muesli

Especially delicious are honey and Agave syrup*. You can also Birch sugar* or Coconut blossom sugar* They are not as harmful to the body as classic household sugar. Maple syrup or rice syrup also work well.

Are you ready? Then let's get straight to it. I'm going to tell you my personal favorite recipe for crunchy muesli. Here you will find a very detailed description for each step. The instructions are aimed at anyone who doesn't have much experience in this area.

At the end of the article you can see a short version of the recipe. You can also find out all about the nutritional values per portion.

This recipe makes enough for about 10 portions.

Ingredients:

  • 50 g hazelnuts
  • 1 tbsp chopped cranberries
  • 150 g oatmeal
  • 50 g Soy flakes*
  • 50 g sunflower seeds
  • 50 g ground almonds*
  • 1 tsp cinnamon
  • 2 TBSP. Coconut oil*
  • 1 tablespoon honey
  • A pinch of salt

Also: scales, bowl, frying pan, wooden spoon

Preparation

Weigh and mix the ingredients

Chop the hazelnuts into small pieces with a knife. Cut each nut in half about twice. This not only makes the nuts easier to eat, but also gives off a little more of their flavor when roasted.

Do the same with the cranberries. You need to cut them at least in half so that they are edible. Put the cranberries in a small bowl and put them to one side, we won't need them again until the very end.

Grab a bowl. Weigh out all the seeds, kernels, nuts and flakes in it. Stir them well with a wooden spoon to mix them together. Finally, fold in the cinnamon.

Coconut oil* Melt

Add 2 tablespoons Coconut oil* into the frying pan.

Very important: Do not turn the hob to full power. Otherwise the honey and muesli ingredients will burn later!

My hotplate has 9 levels, I select the 4th level. That fits perfectly.

As soon as the Coconut oil* begins to melt, add the honey.

Making crunchy muesli

Add the oatmeal and nut mix to the pan. Roast and fry the mixture for 5 minutes. You need to stir the mixture constantly so that it doesn't burn!

Taste after 5 minutes and see if the muesli is already crunchy. It will only be really crunchy later when it has cooled down.

Now turn the hob off completely and add the cranberries to the muesli. Roast them very briefly. Add the salt.

Take the pan off the heat and leave the mixture to cool, stirring occasionally to make sure nothing burns - the base of the pan is still very warm!

Fill granola

Only when the muesli is really cold, pour it into a jar with a screw cap. If you want to speed up the process, you can pour it straight from the pan onto a cold tray lined with baking paper.

The jar needs a good seal so that it is airtight. This is the only way to keep the DIY crunchy muesli crispy and delicious.

How can I prepare granola in the oven?

The same recipe, of course, succeeds in the oven. The procedure is very similar.

  • Melt Coconut oil* and honey in a small saucepan.
  • Add this mixture to the nuts and flakes. Mix until everything is evenly moist.
  • Line a baking sheet with parchment paper.
  • Spread the granola on the tray.
  • The muesli needs 10 minutes at 180° upper-lower heat.
  • Attention: halfway through the cooking time, you will have to turn it over with a spatula or cooking spoon.
  • When the granola is crunchy and dark enough, take it out of the oven. Let it cool and then pour it into a jar with a lid.

The recipe presented here is my absolute favorite, but as we all know, tastes differ. That's why I've written down a few more variations for you to try:

  • Vegans replace honey with maple, acacia or rice syrup.
  • You can replace dried fruit with apple potato chips - or fresh berries, but only add them just before eating
  • Leave out oat flakes and use spelt or rye flakes
  • Do you know cocoa nibs? They are made from the raw cocoa bean and are super chocolaty and crunchy.
  • You can use pine nuts instead of sunflower seeds - they have a nuttier taste
  • A tablespoon of peanut butter or almond cream goes really well with muesli. But here too, please only add it directly before eating
  • You can use vanilla instead of cinnamon
