Yes, I admit. I copied this recipe from my friend's little daughter. She loves banana waffles or sugar. So I just had to taste.

I love this dough and thought I'd just introduce it here.

If there's one thing that always goes, it's bananas. Whether as a snack between meals, before a workout or in the form of juicy waffles.

Have you also bought too many bananas again, then you know the problem of brown bananas certainly very well.

I can't throw them away, it hurts my heart and by the way, it's also a total waste.

Ingredients
 

  • 50 ml Coconut oil
  • 1 brown banana
  • 1 Egg
  • 100 g Spelt flour
  • 0,5 TL Baking powder
  • 50 ml Oat milk Alternative: water, milk

Anleitung

  • Melt the coconut oil in the microwave or in a pot.
  • Peel the banana and mash it with a fork until no pieces are visible. Alternatively, you can use a blender.
  • Mix the oil with one egg. This works wonderfully with a whisk or fork.
  • Add the banana to the batter. Mix well.
  • Follow with the spelt flour, baking powder and the oat milk. Mix the ingredients until the dough has a good consistency.
  • Put the batter into the hot waffle iron with a scoop. Wait a short time and ready!

Too much done? No problem! You can store the waffles in the refrigerator. It is only important that you let them cool down beforehand and then cover them with foil or put them in a Tupperware box.

The waffles quickly absorb refrigerator odor or become dry at the edges without foil. This then no longer tastes so good.

So if you don't have the time and inclination to mess around in the morning, you can prepare banana waffles without sugar in the evening and simply put them in the microwave in the morning. You hardly notice a difference from freshly baked waffles.

Still too much? You can also freeze waffles. I put a foil between the waffles so they don't stick together later. But I can't tell you if that's really necessary. Probably it works also without.

So watch what you eat with your waffles if you want to keep it healthy. In our photo you can see sugar free dark chocolate* and bananas. And a little honey. However, if the bananas are very ripe, you can do without the honey.

What else goes with it: Fruit puree, yogurt and a little cream.

Bananas are also always very tasty with nuts. Hazelnuts, walnuts or almonds are a real hit in terms of taste. Especially if you roast them briefly in a pan - important: without oil!

What I also love with banana waffles is peanut butter. The combination of peanut and banana is mega delicious. And fresh fruit can never be out of place with banana waffles without sugar.
