You have overripe bananas at home? Don't throw them away! Because you can make a super delicious banana bread with them.

Ingredients
 

  • 2 ripe bananas
  • 3 Eggs
  • 1 EL melted coconut oil
  • 100 g Almond flour
  • 50 g ground almonds
  • 1/2 Pack Baking powder
  • 1 TL Cinnamon
  • 1 Pinch Salt

Anleitung

  • Preheat the oven to 180°C top and bottom heat.
  • Mash the two bananas or mash them with a fork.
  • Separate the eggs.
  • Mix the egg yolks and bananas with coconut oil, almond flour, ground almonds, baking powder and cinnamon.
  • Beat the egg whites with a pinch of salt until stiff.
  • Now gently fold the egg whites into the mixture with the other ingredients.
  • Place a baking paper in a loaf pan and fill with the dough.
  • If you like, you can cut a banana in half lengthwise and place it on top of the dough.
  • The banana bread needs about 50 minutes in the oven.
  • After it cools down, you can enjoy it right away.
