The sweetness gets our low carb banana bread exclusively from the ripe bananas. The riper the bananas, the better.

Low carb banana bread
Ingredients
- 2 ripe bananas
- 3 Eggs
- 1 EL melted coconut oil
- 100 g Almond flour
- 50 g ground almonds
- 1/2 Pack Baking powder
- 1 TL Cinnamon
- 1 Pinch Salt
Anleitung
- Preheat the oven to 180°C top and bottom heat.
- Mash the two bananas or mash them with a fork.
- Separate the eggs.
- Mix the egg yolks and bananas with coconut oil, almond flour, ground almonds, baking powder and cinnamon.
- Beat the egg whites with a pinch of salt until stiff.
- Now gently fold the egg whites into the mixture with the other ingredients.
- Place a baking paper in a loaf pan and fill with the dough.
- If you like, you can cut a banana in half lengthwise and place it on top of the dough.
- The banana bread needs about 50 minutes in the oven.
- After it cools down, you can enjoy it right away.
