If there's one thing I really love to eat, it's different variations of veggie wraps. Whether with beans, avocado or something fancier with jackfruit - I could eat them 4-5x a week and probably still not have enough.
Buying a 10-pack of dough patties every time doesn't have to be. They also usually taste boring or labbrig. I have also had the experience that some stick to the teeth.
Making your own wrap dough is very easy. You don't even need to be a good cook. Any child can do it.
The effort is minimal and the taste is many times better than store-bought wraps.
The whole wheat flour gives the dough patties a wonderful taste, which you look for in vain in wraps from the supermarket.
Good to know: Whole-grain spelt wraps are best right after frying and are then also very flexible to bend and fold. So prepare all the ingredients for the filling beforehand. I'll tell you which ones go particularly well in the patties before the dough recipe.

Once you have prepared everything for the filling, you can start making your own wrap dough. The wraps are best rolled directly after baking. As long as they are warm, they are very flexible. If they cool down, they become hard - but no need to worry. Hard wraps can be softened again by brushing them with water.
Just put a little water on the wraps and microwave them for 15 seconds. They are then immediately pliable and warm again.

Alternatively, you can place a damp cloth on the freshly baked wraps to keep them moisturized and from drying out.

Healthy wrap dough from spelt flour
Ingredients
- 400 g Whole spelt flour
- 2 TL ground flaxseed
- ½ TL Baking powder
- ½ TL Salt
- 200 ml Tap water
- 4 EL Olive oil
Equipment
- Rolling pin
- Frying pan
- Bowl
Anleitung
- Sift the flour into a large mixing bowl. This will prevent lumps from forming.
- Mix all ingredients in a bowl. Knead the ingredients into a dough - this is best done with your hands.
- Let the dough rest for 15 minutes.
- Flour the work surface. Divide the dough into 6-8 equal pieces.
- Roll out the dough thinly with a rolling pin. It should be uniformly 1 mm thick in all places.
- Put the wrap dough in a coated pan. Important: Do not use oil. Fry the wraps on both sides. When the batter starts to bubble, it is ready to flip. This often takes less than a minute at full temperature.

Oh man, you made way too little batter again? You now have two options: either wrap the dough in plastic wrap and store it in the fridge - so you can have wraps again tomorrow - or prepare all the wraps, let them cool and put them in a Tupperware container.
I have never tried it with freezing. It should be theoretically possible, but how that affects the consistency, I can not answer.

How to refine the wrap dough
Make wrap dough yourself healthy and delicious is the motto. But that doesn't mean they have to taste boring. If you like it a bit spicier, try stirring these spices into the batter
- Nutmeg
- Paprika powder
- Chili powder
- Chili paste
- Garlic powder
- Pepper
- Sesame seeds
- Replace part of the wholemeal spelt flour with buckwheat flour
And already you give the dough a very special touch. By the way, ready-made spice mixtures such as Thai curry powder also make an excellent addition to the recipe.
Our conclusion
It's not hard to make a wrap dough yourself that is healthy and delicious. With a little flair it goes quite quickly. Important: roll out thinly, best to eat fresh and prepare the filling before the dough patties.
Enjoy it!
