Kukuma cookies *vegan and gluten-free
Ingredients
- 60 g ground almonds
- 120 g fine rolled oats
- 60 g mixed seeds and seeds such as pumpkin, flaxseed, sesame and sunflower
- 60 g Coconut flakes
- 1 Pinch Salt
- 1 TL Turmeric powder
- 1 TL Baking powder
- 40 g Coconut blossom sugar
- 80 g Coconut oil
- 1 mature Banana
- 4 EL Peanut butter
Anleitung
- Mix all dry ingredients together in a bowl.
- Melt the coconut oil in the microwave.
- Peel the banana and mash it with a fork until a pulp is formed. Add the coconut oil. And then the peanut butter.
- Pour the dry ingredients to the wet ones. Mix them with a fork or even better - with your hands. But beware: turmeric stains - better wear gloves!
- Form small balls and flatten them slightly with a spoon.
- If you like, you can sprinkle them with coconut flakes, sesame seeds or other grains before baking.
- The turmeric cookies now go into the oven at 180° top-bottom heat for 20-25 minutes.

How long is the shelf life of the vegan cookies with turmeric?
Hard to say. With us, they have not survived for even a single day.
Since there is a fresh banana in the recipe, you should use up the turmeric cookies as soon as possible. However, they can be kept for one week in a sealed box without any problems.
If you want to be on the safe side, store cookies in a dark and cold place. Before eating, just let them warm up briefly. And then it can already go round :)
