Pasta with salmon and spinach

Quick, easy and mega delicious: spelt noodle with spinach-salmon sauce.

Ingredients
 

  • 1 Zucchini
  • 200 g Spelt noodles
  • 1 Onion (about 50 grams)
  • 125 g Salmon Alternative: pollock fillet
  • 2 TL Vegetable broth
  • 160 ml Water
  • 200 g Leaf spinach, frozen
  • 30 ml Low fat milk
  • 60 g Sour cream In Austria: 30 g cream and 30 g sour cream
  • 1 Pinch Salt, pepper, nutmeg
  • ½ Confederation Parsley

Anleitung

  • Wash the zucchini and cut them into small cubes.
  • Bring the water for the pasta to a boil. As soon as it bubbles: Add the pasta to the salted water.
  • Cut the fish into pieces.
  • Fry the onion in the pan until translucent. Add the fish and fry until done. Finally, add the zucchini.
  • Mix the vegetable broth with water and stir in the sour cream.
  • Add the spinach and the milk. Pour the mixture to the fish. Season with salt, pepper and nutmeg.
  • Strain pasta and add to sauce. Finally, stir in parsley. Done!

How you can refine pasta with salmon and spinach

You feel like giving the pasta even more flavor? No problem. There are no limits to your creativity.

If you have time, you can make the pasta yourself. This way they taste even better. If you want the dish to stay healthy, however, you should not use white flour, but prepare spelt noodles. Or a mixture of spelt and buckwheat.

You can replace the frozen spinach with fresh spinach. You'll need a lot of it, though, because the leaves collapse pretty badly when the pasta is cooked.

If you want, you can replace some of the vegetable broth with white wine. You don't have to stick with salmon, you can use any fish you like. Smoked salmon is also possible.

If you're a big fan of garlic, you can sauté it in the pan with onion and then add the fish.

Lemon zest also goes beautifully with salmon. Add about a teaspoon of lemon zest to the finished dish per plate.

For the eye, red onions are more beautiful than white. And you get a splash of color with tomatoes. Sliced almonds or pine nuts sautéed briefly and hot are also mega delicious with pasta with salmon and spinach.

As you can see, all options are open to you. If you are unsure, you should first prepare the basic recipe and then refine it. Because too many different ingredients mixed crosswise, rarely result in something good.

And what I certainly can not miss: a pinch of freshly grated Parmesan cheese and chili oil.
