Stuffed eggplant low carb

One eggplant is enough for one person. Unless you serve a little quinoa and a big bowl of salad with it. In that case, half an eggplant is usually enough. The calorie count refers to one eggplant half.

Ingredients
 

  • 1 Eggplant
  • 1 EL Olive oil
  • 70 g Mozzarella
  • 10 Cocktail tomatoes
  • 1 Handful Basil and oregano
  • Salt and pepper

Anleitung

  • Preheat the oven to 190° top and bottom heat.
  • Cut the eggplant in half lengthwise and brush with olive oil.
  • Cook them in the oven for 20 minutes. Meanwhile, you can prepare the filling for the low carb eggplant.
  • Halve the tomatoes and cut the mozzarella into cubes. Chop the herbs. Mix everything in a bowl with a little olive oil.
  • When the eggplant is ready, scoop it out with a spoon. Add pepper, salt and herbs to the eggplant.
  • Bake your stuffed eggplant in the oven for about 10-15 minutes. Until the mozzarella has melted.
