Ingredients
- 1 Eggplant
- 1 EL Olive oil
- 70 g Mozzarella
- 10 Cocktail tomatoes
- 1 Handful Basil and oregano
- Salt and pepper
Anleitung
- Preheat the oven to 190° top and bottom heat.
- Cut the eggplant in half lengthwise and brush with olive oil.
- Cook them in the oven for 20 minutes. Meanwhile, you can prepare the filling for the low carb eggplant.
- Halve the tomatoes and cut the mozzarella into cubes. Chop the herbs. Mix everything in a bowl with a little olive oil.
- When the eggplant is ready, scoop it out with a spoon. Add pepper, salt and herbs to the eggplant.
- Bake your stuffed eggplant in the oven for about 10-15 minutes. Until the mozzarella has melted.
