Stuffed eggplant low carb
One eggplant is enough for one person. Unless you serve a little quinoa and a big bowl of salad with it. In that case, half an eggplant is usually enough. The calorie count refers to one eggplant half.

Instruction
Preheat the oven to 190° top and bottom heat.
Cut the eggplant in half lengthwise and brush with olive oil.
Cook them in the oven for 20 minutes. Meanwhile, you can prepare the filling for the low carb eggplant.
Halve the tomatoes and cut the mozzarella into cubes. Chop the herbs. Mix everything in a bowl with a little olive oil.
When the eggplant is ready, scoop it out with a spoon. Add pepper, salt and herbs to the eggplant.
Bake your stuffed eggplant in the oven for about 10-15 minutes. Until the mozzarella has melted.
