What ingredients do I need if I want to make slush ice myself?

Depending on the type of fruit, you only need 2 to 3 ingredients to make a delicious granita. Let's have a look at them in detail.

Fruits

For fruits with a high water content, you can save adding additional water. For other fruits, such as raspberries or strawberries, you should definitely add a little water.

Fruits that are particularly suitable:

  • Mango
  • Watermelon
  • Honeydew melon, sugar melon
  • Strawberries
  • Raspberries
  • Blueberries
  • Pineapple

If you like, you can of course combine two types of fruit.

Some fruits contain a lot of seeds. For example, raspberries or blackberries - they don't look so good in slush ice cream, so you should remove them. The easiest way is to boil them and then press them through a blender.

You have less work with seedless fruits, such as melons or mango. Here you only need a powerful stand mixer to obtain an even fruit water.

Lemon

On hot days, a lemony taste can be very refreshing. However, I advise you to add additional acid only with very sweet fruits, otherwise the refreshment can quickly become very sour.

You need to know that chilled food and drinks always taste a little less sweet than when they're in a liquid state. Have you ever let a store-bought water ice melt and then drunk it? It's so incredibly sweet that you can hardly drink it. However, it is very tasty and refreshing when frozen.

You always have to dissolve the sugar beforehand. So make a quick homemade syrup. Otherwise it will remain in the ice cream.

Ice cube

Depending on the method of preparation (we'll get to that in a moment), you may need ice cubes. With a powerful food processor, they are quickly crushed and your slushi is ready.

In other methods, you do without machines completely - so no ice cream maker and no food processor. You freeze the fruit juice and stir it regularly until the consistency is right.

Optional: sweetener

In many recipes, additional sugar is used. However, this need not be the case if you use very ripe fruit.

If the frozen fruit is not sweet enough for you, then you can use Erythritol* or Birch sugar* help yourself. You should stay away from table sugar, as it is very high in calories and damages the teeth.

With sugar - whether Birch sugar* or normal sugar - you should save. The higher the sugar content in the homemade ice cream, the more liquid the slushi will be. Sugar in any form is like an antifreeze.

How can I color my slush ice cream?

The base for any ice cream is fruit juice. To get different colors for the slushis, you can experiment with fruit.

If the colors are not intense enough for you, you can also use a little bit of Food coloring* help.

  • Red slush = strawberry or raspberry

How can I make slushi myself if I don't have a machine?

Two steps are required to make slush ice:

Prepare slush base

For some fruits, you may need to make a syrup first. These include berries, strawberries, kiwi or mango.

If you want to sweeten your refreshment, you need to boil the syrup to dissolve the sugar in it. If you do not want to add sugar, this step is not necessary.

  • Wash the fruit and cut it into small pieces.
  • Put the fruit in a pot.
  • Turn on the stove. Heat the fruit, stirring constantly - already most fruits give juice.
  • Add the sugar and continue stirring. Attention: Do not stir too long, otherwise the precious slush syrup will evaporate!
  • Stretch the syrup with water. And of course, the more syrup you use, the sweeter the cool crushed refreshment will be.
  • Mix the syrup with ice-cold water and put it in the freezer. Caution: Don't use too much water, ice cubes are also added to the recipe - too much water could cause the slush to lose its flavor!

If you don't use sugar, puree the fresh fruit in a stand mixer and push it through a straining cloth. A few small pieces of fruit are okay, but overall the slush should have more of a water consistency.

Water melon and honeydew melon do not need additional sugar.

Kiwi (with stalk removed) and mango are best pureed and then strained to remove large chunks. With mango, too, you can usually do without additional sweetener.

Prepare slush

You have three options:

  1. Stir slush again and again
  2. Use a lot of ice cubes
  3. Freeze fruit puree

Do you have no powerful food processor*, then you have to keep stirring the slush ice so that it doesn't become too solid.

Fill the syrup into a flat box and put it into the freezer.

After 20 minutes, take the box out of the freezer and stir it. After that, the slush goes back into the freezer - you have to repeat this process about 5 times.

Tip: The flatter the box, the faster the mass freezes!

Use ice cubes

You can put certain fruits directly into the food processor and fill them up with ice cubes - this is the easiest and fastest method. However, it only works for fruits with a very high water content.

Alternatively, you can directly use the syrup that you have made. It must be ice cold for this. The ratio of fruit juice to ice cubes is about 1:1.

Attention: this only works if your machine is powerful!

You have to work quickly. Because the ice thaws very quickly. It's best to have everything at hand and also put the glasses in the refrigerator for a short time so that they are cold.

Freeze fruit puree

Have you bought too much fruit and want to save it from spoiling? Then you can make a slushi syrup and freeze it. Pour the juice into small bags or ice cube molds.

Let the fruit juice freeze through and then put it in the food processor. Blend on high speed until the consistency is perfect. You can add a few ice cubes depending on your mood.
