Ingredients
- 1 large sweet potato (about 300 grams)
- 2 Carrots
- ½ Pineapple
- 2 Spring onion

Ingredients
- 1 large sweet potato
- 1 Garlic clove
- 1 Onion
- 1 TL Curry powder
- 2 TL Tomato paste
- 200 ml Coconut milk
- 1 TL Garam Masala
- 70 g red lentils
- 70 g Chickpeas
- 150 ml Vegetable broth
Anleitung
- Peel sweet potato and dice into 1x1cm pieces. Peel garlic clove and onion. Chop the onion into small pieces.
- Heat 1 tablespoon of olive oil in a large pot. Then sauté the onion until it becomes translucent. Then add the garlic and sauté briefly. Then add the sweet potato.
- Add spices and 1 tablespoon tomato paste to the pot and fry. Then add the red lentils. Deglaze with coconut milk and vegetable stock and simmer for 20-25 minutes over medium heat.

- 1 large sweet potato
- 1 Onion
- 1 EL Curry paste
- 1 TL Lemongrass paste
- 250 ml Coconut milk
- 300 ml Vegetable broth
- 150 g Baby spinach
- Salt and lemon juice to taste
Anleitung
- Peel the sweet potato and dice into 1x1cm pieces. Now peel the onion and chop finely.
- Now heat some oil in a large frying pan. Add the onion and sauté. Add 1 large tablespoon curry paste and 1 teaspoon lemongrass paste and sauté.
- Then add the sweet potato. Deglaze everything with coconut milk and the broth. Simmer over medium heat for 10-12 minutes.
- In the meantime, wash and drain the spinach leaves. Finally, add it to the pan. When the spinach has collapsed, the dish is ready.
