large sweet potato (about 300 grams)

Instruction
Peel and slice the sweet potato and carrots. Peel and dice the pineapple.
Heat olive oil in a large pot and sauté carrots. Add 1 tablespoon curry paste.
Now add coconut milk, pineapple and sweet potatoes. Simmer over medium heat for 10-12 minutes. Add a little salt according to taste.
During this time, wash the scallions, drain and cut into thin rings. The last 2 minutes they can be added to the pot.
