  • ¼ Pc Leeks
  • ½ Onion
  • 50 g Quinoa
  • ¼ l Vegetable broth
  • 1 Bar Lemongrass
  • 1 cm fresh ginger
  • 1 EL Lemon zest
  • ¼ l Coconut milk
  • 1 Pinch Curry and salt

Anleitung

  • Cut the leek and onion very small and dice.
  • Fry them briefly in coconut oil. Mix in the quinoa and pour in vegetable broth.
  • Stir in salt, curry, ginger and chopped lemongrass.
  • Simmer for 15 minutes. Stir again and again so that the quinoa does not burn.
  • Add coconut milk and season to taste. Is the quinoa already soft? If not, just let it simmer a little longer.
