Instruction
Cut the leek and onion very small and dice.
Fry them briefly in coconut oil. Mix in the quinoa and pour in vegetable broth.
Stir in salt, curry, ginger and chopped lemongrass.
Simmer for 15 minutes. Stir again and again so that the quinoa does not burn.
Add coconut milk and season to taste. Is the quinoa already soft? If not, just let it simmer a little longer.
