Well, I could eat pumpkin soup every day. Only at some point it becomes too monotonous and boring even for me.

Fortunately, you can prepare so many different recipes. Today I would like to introduce you to one of my favorites: Pumpkin soup with apple.

Please what? Pumpkin soup with apple? How should that go together? That's what I asked myself at the beginning.

But pumpkin, apple and ginger harmonize just wonderfully. The sweet and slightly spicy aroma really brings out the pumpkin flavor.

The soup is made creamy by potatoes. This soup is so easy to recreate that I usually do not use a recipe for it.

By the way, I add vegetable broth to the soup that I have prepared myself beforehand. Instead of buying soup cubes, you can make instant vegetable broth and store it in the fridge. Works wonderfully.

Ingredients
 

  • 500 g Hokkaido
  • 2 medium potatoes
  • 1 Apple
  • 1 small onion
  • 1 cm Ginger
  • 5 Sage leaves
  • 2 EL Olive oil
  • 250 ml Vegetable broth
  • 1 TL Curry powder
  • Salt, pepper and nutmeg to taste

Anleitung

  • Wash the Hokkaido, cut it in half, remove the seeds and cut it into small pieces. But you leave the peel on.
  • Peel the potatoes. Cut the potatoes and the apple into small pieces.
  • Chop the onion and ginger and fry both in olive oil until translucent.
  • Now add the pumpkin and after about 2 minutes potato and apple pieces.
  • Pour in vegetable broth, add the curry powder and sage. Cover and simmer on low heat for at least 20 minutes.
  • Finally, season with nutmeg, salt and pepper and puree. Done!
