Line a baking tray with baking paper. Preheat the oven to 180° top-bottom heat.
Chop the nuts and set them aside.
Mix spelt flour, baking powder and salt in a bowl.
Now add yogurt and mineral water one after the other. Stir well. Works wonderfully with your hands or a mixer with kneading attachment.
At the very end, knead in the pumpkin seeds and nuts. Knead a few times with your hands so that everything mixes really well and you can better estimate the consistency of the dough. Is the dough very sticky? Add another tablespoon of flour!
Spread a little flour in your hands and form balls of dough. Place the dough balls on the baking tray.
Coat the buns with a water and sprinkle them with seeds of your choice. Press your topping lightly with your fingers.
Off with it in the oven. Tip: Use the lowest rack in the oven, so the seeds on the buns do not burn. After 20 minutes they are nicely risen and evenly brown. You've certainly never eaten such quick rolls, have you? :)
