Instruction
Wash the Hokkaido, cut it in half, remove the seeds and cut it into small pieces. But you leave the peel on.
Peel the potatoes. Cut the potatoes and the apple into small pieces.
Chop the onion and ginger and fry both in olive oil until translucent.
Now add the pumpkin and after about 2 minutes potato and apple pieces.
Pour in vegetable broth, add the curry powder and sage. Cover and simmer on low heat for at least 20 minutes.
Finally, season with nutmeg, salt and pepper and puree. Done!
