Peel the potatoes and boil them. Attention: Do not pour away the water! Catch 150 ml of cooking water and put it aside.

Mash the potatoes or shred them in a food processor. Let them cool to room temperature. Add the olive oil.

Now add the remaining ingredients step by step. In my experience, the ingredients for the bread are best kneaded with your hands. But be careful: the potatoes are hot!
500 g light spelt flour, 2 ½ tsp. salt, 2 tsp bread spice, 12 g baking powder
Do not forget to add the cooking water. If you have accidentally poured it away, use tap water instead.

Heat the oven to 180°. Place a bowl of water in the oven so that the bread does not dry out too much.
You can either put the bread into a cake pan or form it into a ball and place it on the baking paper. If you decide to use a cake pan, you should line it with baking paper.
Slice the surface of the bread very lightly with a knife. Your potato bread without yeast needs about 40 minutes in the oven.
