Ingredients
 

  • 600 g Whole spelt flour
  • 15 g Baking soda approx 1 tbsp
  • 1 Pkg Baking powder
  • 30 g fine rolled oats
  • 1 EL Herbal salt
  • 300 g grated carrots
  • 350 ml lukewarm water
  • 20 g ground flaxseed
  • 40 g Sunflower seeds and pumpkin seeds mixed

Anleitung

  • Preheat the oven to 200°.
  • Coarsely chop sunflower seeds and pumpkin seeds with a knife. Put them aside.
  • Mix flour, baking soda, baking powder and oatmeal in a bowl. Stir the dry ingredients together with a spoon. Now add the salt.
  • Fold in the carrots. Now you need a food processor or a mixer with a dough hook.
  • Add the water to the dry ingredients and mix. Now add the flax seeds and the chopped seeds. Mix all the ingredients together well.
  • Set aside briefly and flour the work surface. Form a ball out of the dough. Is it too sticky? Add a little more flour.
  • Put it on the baking tray (with baking paper). Dampen the bread with a brush and sprinkle a colorful core mixture on top. Score the bread with a knife. Put the bread into the hot oven. Bake it for 15 minutes at 200°. Then turn down to 180° Celsius and bake for 40 minutes.
  • Keep a close eye on the bread without yeast. It should rise evenly due to the baking powder. If it does not, turn it 90° in a circle after half the baking time. So that the side that was in the back before is only in the front. That way it will rise evenly.

What baking dish is suitable for the bread without yeast

Bread is always finished fastest in oblong baking pans. It is baked evenly and is later also quite easy to cut.

You can either form our bread into a ball or put it into a 30 cm silicone loaf pan. You can also use a metal mold, but make sure that it has a non-stick coating.

If you wish, you can line the baking pan with baking paper. This is not absolutely necessary for silicone molds or those that have a coating.

Baking paper is more for molds that tend to stick the dough. But this is not the case with our bread without yeast.

It is best to grease the mold with a little oil, then nothing is guaranteed to stick.

How long to bake the bread without yeast

Depending on the oven - and yes, this can really vary enormously - the bread takes different amounts of time.

I even have to turn it once in the oven. Otherwise it will be mega dark on one side and too light on the other. That's why I can only give approximate figures.

  • In the oblong baking pan, the bread needs about 35 minutes at 180° top-bottom heat.
  • In the ball form you should plan about 40 minutes. The first 15 minutes are baked at 200° and later at 180°.

The most reliable test is the stick test. To do this, take a wooden skewer and poke it into the center of the bread. If dough sticks to it, it needs even longer.

Spelt bread without yeast

The knock test also shows whether it is through. However, this is more suitable for the round shape. Turn the baked bread over and tap the underside. If it sounds hollow, it is done.

What flours are the best for baking

I am not a fan of white flour. But if you want, you can of course use it.

  • Wheat flour 550 and 405 or whole wheat flour
  • Spelt flour 630 and 1050 or whole spelt flour

Be aware that you need more water with whole wheat flour. So use at least 3 tablespoons more water for the dough, so that it does not become dry and becomes supple.

If you like, you can replace some of the wheat or spelt flour. Buckwheat flour, sweet lupine flour, nut flours or hemp flour bring more flavor to the bread. Replace about a third of the wheat or spelt flour with them.

Why you shouldn't give up flaxseed

Are the Flaxseed* really absolutely necessary? I say yes. Flaxseed* hold the dough together wonderfully, they are a bit like glue, but a healthy one.

Ground Flaxseed* ensure that the bread does not crumble when sliced.

And for the digestion they also have something good: Flaxseed* They stimulate digestion and provide you with lots of delicious fiber. The healthy omega 3 fatty acid ensures a healthy heart.

And besides, you can hardly taste them. But in order for them to develop their full effect, they must be ground.

You can either grind Flaxseed* or simply make it yourself. They are easy to grind in a food processor.

Whole flax seeds, on the other hand, are again wonderful for sprinkling on bread.

How you can refine a bread without yeast

If you need inspiration for baking bread, you'll find ingredients that make it especially varied.

Bake carrot bread

  • Seeds and nuts: Pumpkin seeds, sunflower seeds, hazelnut kernels, walnuts, almonds, Cashews*.
  • Seeds: Chia*linseed, sesame seeds.
  • Vegetables: shredded carrots or zucchini.
  • Spices: Bread spice mixtures, fried onion, cumin, coriander, anise, fennel.
  • Other: A little apple cider vinegar, malt beer instead of water.

Always add nuts, spices and seeds at the end. Never at the beginning. Also, always chop them coarsely, so the flavor is distributed better and it is also easier to eat and cut.

Oil for the bread dough

You can replace some of the water with oil. Always use a neutral-tasting oil for baking bread. Otherwise it will mask the taste of the other ingredients.

Quite wonderfully suitable are rapeseed oil or sunflower oil.

Oil makes the dough more supple. It is used mainly for toast and rolls. You can also use it for bread, but water usually does the trick. Besides, water in bread recipe saves calories :)

In breads usually end up 2 tablespoons of oil to about 400 grams of flour.
