The fish makes the pizza low carb and also provides a load of protein in the dough.

What you need to keep in mind when you prepare the recipe, I'll tell you now.

Thin bottom

Many who have not yet prepared the recipe make a crucial mistake at the first attempt: they forget to spread the dough very thinly. If it is too thick, it will be too dark on the outside and remain mushy on the inside.

Optimal is 1 to 2 cm - make sure that the dough is evenly thin. It can be a little thicker at the edge.

Only when the base is thin, it becomes crispy on the outside and bottom in the oven and remains juicy on the surface.

Pre-bake

You prepare for the first time a low carbohydrate pizza too? Then you should read through this quickly before you start baking.

Low carb pizza bases must always be pre-baked. So the dough first comes alone in the oven. And without toppings.

Pre-baking is important because it gives the dough its consistency. A low carb pizza dough is always much softer than a dough made from flour. It appears soft before baking - but in any case it should not be liquid.

The eggs provide a high proportion of liquid. As they set at high temperatures, the dough becomes firmer - and can then be topped.

So it takes one more step than a traditional pizza. But it's worth it.

If you were to spread the tomato sauce on the dough, which is not pre-baked, it would be a very soggy affair.

Time and again, pizza bakers report that the dough is not baked evenly well. It is very dark on the back side, while the pizza is still mushy in the front.

Before we get right to the recipe, I'd like to say a few words about the ingredients. After all, you should know what you are eating and why I chose exactly these ingredients.

I also tell you how you can refine the pizza with tuna base and what you should not do without under any circumstances.

Tuna for the low carb pizza

Our main ingredient is of course tuna. It is particularly rich in protein and provides various minerals such as iron, zinc, magnesium or iodine.

In addition, tuna has a high content of Omega-3 fatty acids. These polyunsaturated fatty acids are among the healthiest fats of all.

They are not only flavor carriers, but also inhibit inflammation in the body, protect the vessels and strengthen the immune system.

Moreover, fish is one of the few dietary sources of fat-soluble vitamin D.

I buy canned tuna in its own juice because it's not as greasy as the version with sunflower or canola oil. There is also canned fish with flavor, such as paprika, sweet and sour and Co, so you can also try it - how it tastes then, I do not know.

I'll stick with the pure variant.

Eggs in pizza crust

The second ingredient in our pizza dough is eggs. The proteins available in the egg are extremely high quality. They can be absorbed and utilized by the body at 100 %.

In addition, eggs make you feel full well and, above all, for a long time.

Except for vitamin C, eggs contain all important vitamins. These include vitamin A, vitamin D, vitamin E and various B vitamins. In addition, the trace elements zinc, iron and selenium, as well as antioxidants are found in the egg.

That's all you need for the dough. If you want, you can add a little salt and pepper.

Increase protein content

Still too little egg white in the dough? Then instead of 2 cans of tuna take only one can and instead of the second can you take a cup of grainy cream cheese.

Likewise, you can stir 2 tablespoons of fine rolled oats into the batter.

Tip: If you like, you can add pizza seasoning to the dough. The double baking gives it plenty of time to release its aromas. You can easily make your own pizza seasoning!

Here comes a detailed tutorial with lots of tips and tricks to make your pizza a sure success.

The recipe is enough for two people.

Ingredients

  • 2 cans tuna
  • 2 eggs
  • 25 g tomato paste
  • 40 g tomatoes strained
  • 1 handful basil
  • 1 pinch oregano
  • 50 g mushrooms
  • 1/2 onion
  • 30 g grated cheese
  • 1 handful arugula
  • To taste: salt and pepper

Also: bowl, colander, kitchen paper, oven, baking tray

1. preheat the oven

The first step is to preheat the oven to 200°. Line a baking tray with baking paper and place it right next to the work surface.

2. prepare the dough

Pour the juice from the tuna cans. Even if the temptation is great: do without washing up!

Put the fish in a colander, drain it well and soak up the excess liquid with kitchen paper. Cut the fish into small pieces with a fork until it is very fine.

Add the eggs and a little salt.

Mix the fish and eggs with your hands. Alternatively, it also works quite well with a fork or spoon.

3. pre-bake the pizza base

Spread the mixture on the baking paper. Make sure that the tuna pizza dough is nice and flat, but that no holes are formed. I put the dough as a whole in the middle of the paper and spread it with a spoon or kitchen spatula flat from the inside out.

Leave the edge a little thicker, just like a "real" pizza.

When the oven is hot, bake them in it for 15 minutes.

The dough should become noticeably firmer and brown.

If you like, you can also add garlic - for this you have to peel it and press it through a garlic press. But be careful: do not overdo it, because garlic becomes very intense during baking!

Season the sauce with salt and pepper.

The sauce should not be too liquid. If it is as liquid as water, add more tomato paste and use it the next day as a base for a vegetable sauce with pasta.
