Cookies always go. Whether in summer, autumn or winter. Especially if they are made of peanut butter.

This recipe is my absolute favorite and will make it into the Christmas cookie jar, tea and hot chocolate this year.

As you can see, I've been hit hard. But no wonder. These cookies are really delicious.

If you want your peanut butter cookies to be low carb, simply omit the flour and table sugar.

There are so many other delicious ingredients that can make peanut cookies succeed and taste even better.

Ground almonds* and hazelnuts provide plenty of flavor. Simply replace the white flour with Coconut flour*. This has the great advantage that it is low carb and tastes deliciously fruity like coconut.

However, you should know that you can not replace white flour 1:1 with Coconut flour* can be substituted. It has a completely different baking property.

The flour from coconuts absorbs a lot of liquid, which also explains why you need so much peanut butter and Flaxseed*-Water mixture needed.

But I'm omitting even more things from this recipe. To make the peanut butter cookies low carb and vegan, we omit egg and dairy. Why?

Well, there are lots of food intolerances. In order to not even have to think about which of my friends can eat which cookie, almost all of them are going vegan with me this year.

So there are no problems if someone has problems with egg or lactose. And I have also thought about all those who have a gluten intolerance or celiac disease. Both nuts and Flaxseed* and Coconut flour* are gluten-free.

Ingredients
 

  • 4 EL ground flaxseed
  • 12 EL Tap water
  • 60 g ground hazelnuts
  • 60 g ground almonds
  • 40 g Coconut flour
  • 10 g Baking powder approx. 1 tbsp.
  • 60 g Erythritol
  • 100 g Peanut butter
  • 1 EL Rapeseed oil
  • 2 EL Xucker chocolate drops

Anleitung

  • Preheat the oven to 180° and line a baking tray with baking paper.
  • Mix flax seeds and water in a cup and let the mix. It takes about 5 minutes.
  • Put the dry ingredients in a bowl and mix well.
  • Mix peanut butter and canola oil in another bowl - if the peanut butter is very thick. If not, you can add it to the dry ingredients right away.
  • Now add the flaxseed-water mix. Knead the dough with your hands. Is it too dry? Then add a sip of water. Finally, add the Xucker chocolate drops.
  • Form small balls with your hands. You will need about 1 tablespoon of dough per peanut butter cookie. Flatten the cookies slightly with a tablespoon.
  • Put them in the oven. Your peanut butter cookies will take about 15 minutes.

Then put them in an airtight box. I like to use a cookie jar for this, but a tupperware box will also do the trick. Don't put the box in the sun, dark and cool will keep the cookies the longest.

In winter, I store the box outdoors. So the peanut butter cookies easily keep for a month. But it is also possible at room temperature. However, you will see that they are so delicious that they do not even last two weeks :)
