If you want to make your own peanut butter, you don't need to roast the peanuts. However, most people roast the nuts because this gives the butter a fuller flavor and of course it has a slight roasted aroma afterwards.

I roast half of the peanuts and leave the other half pure.

Do I have to shell the peanuts?

Yes, I recommend removing the brown skin from the peanuts. It is bitter and will give the cream a bitter taste later on.

Admittedly: This is not a nice or pleasant job. To speed up the process, you can put the nuts in a cloth and gently rub them back and forth. In most cases, the shells come off very easily.

If the shell is stubborn, you can put the nuts in lukewarm water for 15 minutes and then try the kitchen towel trick again.

If you want to save time, buy shelled, unsalted peanuts. However, this is of course more expensive than doing it yourself.

How can I sweeten peanut butter without sugar?

You like peanut butter sweet? No problem. Because even then you don't have to resort to refined sugar.

Tasty alternatives save calories and are considered healthier. Nevertheless, the purer the peanut cream, the healthier it is. It is usually better to sweeten the cream before you use it. For example, when you add it to a shake.

This depends on what ingredients you have used and how old the nuts are. Generally, peanut butter will keep for about a month in the fridge without spoiling.

Take the jar out of the fridge, remove as much as you need and then put the jar straight back in the fridge. Incidentally, it tastes best at room temperature because it then becomes a little more liquid.

Can I make my own peanut cream without a food processor?

Most of the work is in preparing the peanuts. The pureeing and mixing is not witchcraft, if you have a powerful food processor* at hand. It can chop nuts, puree them and turn them into puree. You can't achieve the creamy and smooth consistency without help.

The best alternatives for the food processor are a Thermomix or high-performance blender.

What ingredients do I need to make peanut butter?

You may have bought a peanut cream recently and noticed that they are all packed with sugar. I don't want that because I try to eat healthily. That's why I avoid household sugar as much as possible.

Let's take a quick look at the ingredients list. I'll also tell you which ingredients you can substitute with what if you don't have them to hand. But it's really not rocket science, you only need two ingredients for the basic recipe.

Peanuts

Salted or unsalted - that's up to you. I usually mix 50:50 and get the benefits of both nuts. The pleasant, mild, nutty taste from the unroasted nuts and the intense taste with a roasted aroma from the other nuts.

By the way: If you keep receiving peanuts as a gift in the fall/winter, you don't have to use them right away. If you store the nuts in a dry, dark place at 8 to 10°, they will keep for up to six months.

Taste the nuts before you use them to make peanut cream. You can recognize rancid nuts immediately by their smell and taste. Unfortunately, they have to go in the bin.

Salted peanuts are only suitable to a limited extent. Even if you wash them off, they still contain a very salty flavor. You can use this salty cream for cooking. It goes well on pasta, in sauces and in savory dishes such as wraps or patties.

Peanut oil

If you don't have peanut oil to hand, you can also use another high-quality vegetable oil. In this case, I recommend choosing a neutral-tasting oil so as not to mask the peanut flavor. A tasteless sunflower or rapeseed oil is suitable for this.

However, peanut oil is something very special because it has a very intense flavor. Cold-pressed peanut oil can be kept in the fridge for 4-6 months - far longer than any other vegetable oil.

It is impossible to imagine Asian cuisine without this cooking oil.

Add about 1 tablespoon of peanut oil to 400 g of peanuts.

    The small nuts burn very quickly. It is therefore best not to move away from the oven or pan. Roasting the peanuts is a bit of an art and has a big impact on the taste of the DIY peanut butter!
  • Choose a slow speed for the blender
    This makes the mixture more creamy. It is better to allow a little more time!
  • Mix spices and co under hot nuts

1. prepare the peanuts

3. prepare the peanut butter

Put the peanuts in a food processor and blend until the oil comes out. After 5 minutes, you will have a creamy paste that is still relatively thick.

Add the peanut oil, salt and Erythritol* to this. Blend until you are happy with the consistency.

Tip: It is worth brushing the mixture from the edge to the center of the bowl with a spatula from time to time so that the peanut butter is evenly pureed.
