I was quite busy in the fall and started to boil down applesauce. 50 jars later, I'm now standing there and don't know where to put all the fruit puree.

So I started to use applesauce as an egg substitute. In the process, a few delicious recipes have emerged. One of them I would like to present to you today: Pancakes without egg.

They are a great way to use up a jar of applesauce you've started.

Why you'll love these egg-free pancakes

I like this recipe because you don't even need a kitchen utensil to make it. A simple whisk or even a normal spoon is enough to mix the dough together. You also need a bowl and a pan. That's it. The ingredients are simply put into a bowl, stirred and that's it. Mixing the dough takes just 3 minutes.

You save the separation, whipping and folding in the egg whites. The applesauce ensures that the dough is very juicy. So they are absolutely sure to succeed. Even if you are an absolutely untalented cook :)

Why you should sweeten pancakes with applesauce

If you'll take a quick look at the recipe, you'll see that to sweeten it up, I used a little Erythritol* are used. But why actually? Applesauce is sweet enough, isn't it?

Yes, fruit puree is sweet. But when it is heated in the pan or in the oven, it loses its sweet taste. It then still ensures that the pancakes are juicy and have a wonderful consistency, but they are far from sweet. The mush then tastes quite neutral.

So if you're making pancakes without egg, the applesauce is the egg substitute, not the sweetener substitute.

I use for this recipe a little Erythritol*. If you prefer, you can also use Birch sugar* or Coconut blossom sugar* use. Household sugar should be avoided because it is unhealthy, promotes tooth decay and is high in calories.

Ingredients
 

  • 5 EL Fine oatmeal
  • 200 g Whole spelt flour
  • 2 TL Baking powder
  • 2 EL Erythritol
  • 150 g Applesauce
  • 200 ml Oat milk
  • ½ TL Cinnamon

Equipment

  • Bowl
  • Whisk
  • Pan

Anleitung

  • Put rolled oats, spelt flour, baking powder and erythritol in a bowl. Mix well together.
  • Now add applesauce, oat milk and cinnamon. Mix all ingredients well together - this works wonderfully with a whisk.
  • If the dough is too firm, add a little more vegetable milk.
  • Fry the pancakes with a little oil in a pan on both sides for about 2 minutes. The pancakes taste best fresh with an applesauce topping.

Have you made too many? No problem. You can freeze them. Let them cool completely and then put them in a box with a lid. If you don't want them to stick together later, put a piece of baking paper between each pancake.
