  • 1 kg birch sugar
  • 1 L tap water
  • 20 elderflowers
  • 20 g Citric acid*
  • 1 organic lemon or orange

1. prepare the syrup

If you want to make elderflower syrup with birch sugar, first you need to prepare the base for the syrup.

Put the birch sugar in a large pot with water. Turn on the stove and heat the water until the sugar dissolves. In the meantime, keep stirring so that nothing burns.

Now set the sugar water aside and let it cool completely. Never pour warm or hot liquids over the flowers!

2. clean the elderflowers

I usually do it this way: Put on sugar water, let it cool and in the meantime collect the flowers. Until the syrup is cool enough, passes at least an hour. This is the best use of time.

When you have the flowers in front of you, you need to clean them. Remove insects and dried flowers. You can leave the styles on the flowers and do not need to remove them.

The only important thing is that you don't wash the cones, because that will wash off all the pollen.

Put the cones with the flowers down in the sugar water. They now float on the surface, which is quite normal and perfectly fine.

3. prepare lemons and oranges

Wash the lemon with hot water.

Cut the lemon into small pieces. You can also use an orange or both. However, look for organic quality. In conventional lemons, the peel is treated with pesticides.

Scatter the Citric acid* into the pot and stir well again.

Put the lemon slices into the pot. Now put the lid on and wait.

4. patience

Until you can enjoy your elderflower syrup with birch sugar, you need patience. Put the pot in a cool and dark place for three days. I put the syrup in the refrigerator because I have no other place. But it also works in the cellar.

Set a reminder in your cell phone. Now you need to stir 2x a day. Always use a clean spoon for this.

5. fill the syrup

After 3 days it is done - you can taste for the first time. When you are satisfied, collect the flowers from the sugar water. Pour the syrup through a sieve. I line the strainer with a clean kitchen towel to filter out all the blossoms. And you'll find a little bug or two in the juice, too, but don't worry about it.

Simply sift, squeeze the cloth and you're done.

Now pour the syrup into a pot and boil it again. As soon as it bubbles, remove the pot from the stove and pour the syrup hot.

How to bottle elderberry syrup

To preserve your homemade juice, you need bottles. You can buy them or simply use glass bottles that you have at home.

It is important that they can be closed tightly and the closure is not damaged.

By the way, place bottles to cool not on the head! This reduces the durability enormously.

You need:

Rinse the bottles well and then place them in a 90° oven for 5 minutes. When they have cooled down, you are ready to go. Alternatively you can sterilize in saucepan or microwave oven.

Pour the elderberry syrup with the strainer into a pot. Bring the syrup to a boil and then remove it from the heat immediately.

Now fill it into the bottles with a funnel. You should not do without the funnel, without the thing filling becomes a sticky nightmare.

After filling, the elderflower syrup is immediately sealed.

Once the juice is cold, you can decorate the bottles with beautiful labels.

Stored homemade elder juice is best in the cellar or refrigerator. It is important that it cool and dark is.

  • Until you can enjoy your elderflower syrup with birch sugar, you need patience. Put the bowl in the refrigerator or in a cool place for 3-5 days. A cold cellar also does a good job. Stir the syrup 2x per day.
  • Fish the flowers from the sugar water and pour the syrup through a sieve. Now you need to boil the syrup, stirring constantly, and then pour into clean bottles.

Notes

Dilute the syrup 1:7 with water. So you get 7 liters of juice from 1 liter of syrup.
