What ingredients do I need for lavender syrup?

If you want to prepare lavender syrup, you only need 4 ingredients. Flowers, sugar, lemon and water.

Lavender flowers

You can use fresh or dried lavender flowers* use the fresh ones. The fresh ones have the advantage that they color the juice slightly pink. They also taste much more intense.

Always harvest the flowers on dry days. After the rain they have much less aroma - in such a case, it is best to let them dry on the plant for another day before cutting them off.

Wait to harvest until the plant is in full bloom. If you harvest too early, you use a lot of buds that are not so aromatic.

When you harvest the purple flowers, always remember to leave some for insects as well. Bees, bumblebees and co love lavender.

Attention: Collect only clean flowers. Indeed, they are not washed before preparing the syrup, because the aroma is lost!

Birch sugar

From a purely taste point of view, it makes little difference whether the syrup contains sugar or Xylitol* is. But it makes a big difference to your health. Birch sugar* is much healthier for your teeth. While conventional household sugar causes tooth decay, the alternative protects the teeth.

Xylitol* creates an environment in the mouth in which tooth decay cannot multiply. At the same time, it contains only half as many calories, which is of course better for our figure.

And in addition, it does not make the blood sugar level go on such an extreme roller coaster. This has the advantage that cravings do not occur.

Lemon

For syrup to be refreshing and work, lemon comes into play. You can use fresh lemon, lemon juice or Citric acid* use. When dosing Citric acid* especially the quantity - it is much more intense than a fresh fruit.

How to make lavender syrup?

Making a lavender syrup is not difficult. As with all flower syrup recipes, you need sugar, water, lemon and flowers. After dissolving the sugar in the water, add lemon and stir in the flowers.

Now the syrup must infuse in the refrigerator or cellar for about 2-3 days, stirring regularly. Ready!

The recipe makes 1.5 liters of syrup.

Instructions for homemade lavender syrup

  1. Dissolve the sugar in water. Tip if time is short: dissolve the sugar in hot water, but use only about 1/4 of the water actually needed. Once the sugar has dissolved, pour ice-cold water over it so that you can immediately add the flowers to the water. Do not forget the lemon! The water must always be cool when you pour it over the flowers.
  2. Halve the lemon and squeeze it. Add the juice to the sugar mixture and mix the ingredients thoroughly.
  3. Pluck the heads of the Lavender flowers* from the stem. You can leave part of the stalk on without any problems, making it easier to remove the flowers later.
  4. Once the sugar mixture has cooled, stir in the flowers.
  5. Put the pot with the flowers in the refrigerator, cellar or pantry. Set a timer and do not forget to stir once a day.
  6. After three days, the lavender syrup recipe is ready. Now you need clean bottles to be able to fill it. For this you need to sterilize the bottles - how to do it, you can read here: "How to sterilize bottles and jars correctly„.
  7. Strain the syrup through a fine sieve. You can also use a kitchen towel or a coffee filter if you want the juice to be completely clean.
  8. Boil the syrup again. If you like, you can heat the flowers briefly to gain even more flavor. However, they should not boil, because then the syrup can become bitter.
  9. Pour the syrup hot into the clean bottles. A funnel and a soup ladle will help you. Seal the bottles immediately.

Once the bottles are cooled, decorate them with a label. Now store them in the dark at room temperature. So either in the pantry or in a cellar.

TipA homemade lavender syrup is a great gift! It's best to stick a label with the uses on the bottle.

Those who wish can still enjoy a little Food coloring* add to it. This makes the syrup a little more purple. However, we have dispensed with this.

Without Food coloring* it turns slightly pink as in the photos. That looks beautiful. Dried flowers are colorless - use a few drops of pink or purple Food coloring* for the syrup to enhance its appearance.

How do I preserve the lavender syrup recipe?

On the one hand, through the preparation. And on the other hand, of course, by the storage.

Your lavender syrup recipe is preserved by the sugar and by boiling. But also through the bottles.

With the bottles you have to make sure that they are really clean. In other words, they must not be contaminated in any way. I rinse the bottles again with very hot water before filling.

Then they go into the oven at 100° for another 10 minutes. This gives bacteria and other contaminants the rest.

If you use a bottle with a screw cap, you must also disinfect the lids. To do this, place them in hot water. After a few minutes, take them out of the water. Dry them well.

Pour the syrup hot into the bottles. Close the bottles tightly.

Another influence on the shelf life of your lavender syrup recipe is storage.

Put the syrup in a dark and cool place. Preferably in the cellar. Room temperature is also fine - but then you should make sure that the lavender syrup is dark. Once opened, store the bottle in the refrigerator and use it within a week.
