Birch sugar* hardly increases the blood sugar level.

But beware: If you have a fructose intolerance, you should rather use table sugar!

As simple as it is, there are a few things you have to keep in mind. So that it succeeds and nothing goes wrong, here are the most important tips.

1. disinfect the bottles properly

Dirty bottles and screw caps ensure that the juice does not last long. Therefore, you need to disinfect them well. The best and quickest way to do this is in the microwave.

  • Wash the bottles thoroughly with hot water. It is best to use a bottle brush for this.
  • Dry them with a paper towel or fresh dish towel.
  • And now it's off to the microwave. Put 3 bottles each in the microwave and heat them on the highest setting for 1 minute. They should get really hot. This way you can kill all bacteria.
  • Put the screw caps in a pot of boiling water. Boil them for at least 3 minutes. Dry them and you can fill the homemade strawberry syrup.

2. let the syrup boil

Do not fill it too early. It must bubble and bubble. This also has a positive effect on the shelf life.

Stir the syrup with a wooden spoon until all the sugar crystals have dissolved.

If you don't want any strawberry residue in the bottle at all, then you should use a very fine hair sieve. And line it with a straining cloth that is also very fine-meshed.

What you need now are bottles, a sieve, a bowl and a pot.

Tip: Bottles with swing stoppers are particularly practical! I always take rather small bottles. So you do not have to use up the whole syrup so quickly. If the bottle is namely once opened, you have a maximum of 7 days before the strawberry juice goes bad.

Ingredients
 

  • 2 kg Strawberries
  • 1 L Tap water
  • 1 Pkg Citric acid
  • 1 kg Birch sugar

Anleitung

  • Wash and clean the strawberries. Cut them into small pieces.
  • Put the strawberries in a large pot and fill with tap water. Cover with a lid and bring to a boil. Let the strawberries simmer for at least 15 minutes.
  • Get a large bowl ready and line a fine sieve with a muslin cloth. Pour the strawberry juice through the sieve and squeeze them really well in the cloth.
  • Mix citric acid and birch sugar and add them to the pot. Pour in the strawberry juice. Let the mixture boil and then simmer gently for 5 minutes. Taste the syrup and add more citric acid if necessary.
  • Fill the syrup into the prepared bottles with a funnel. Close the bottles and let them cool. Now you are ready to make your own strawberry syrup.

You can spice up the syrup with it. Especially delicious are

  • Vanilla pulp
  • Lime
  • Lemon
  • Orange

Once the syrup is ready, mint fits perfectly into the iced water.

If you decide to use vanilla pulp, simply cook the pod with it. Let the mixture rest overnight in the refrigerator. Boil the juice again, then remove the pod and bottle the syrup.

How long can keep DIY strawberry syrup

If you disinfect the bottles well and find the perfect storage place, you can drink the syrup for a year. However, it still tastes wonderful even after 2 years.

When storing the strawberry syrup, make sure that the bottles are stored in a dark and cool place.

A cellar is perfect. Alternatively, a pantry where it's a little cooler will do. Or a refrigerator, if you have a big one.

Once the bottle is opened, you should use it up within a week and store it in the refrigerator.
