Do you have a waffle iron at home? No? Sorry, but then you've really missed something in your life so far. I didn't want to believe that before either.

But last week I tried homemade waffles for the first time. And you know what? I am absolutely addicted to waffles!

The best thing on the weekend is an extended, leisurely breakfast. Gladly until 10 or 11 o'clock. One has at least 1x per week no stress. Wonderful.

Until now, muesli, ham, eggs and co. were on the breakfast menu. But now that's over! Something new must come!

After wrestling with myself for a long time, asking questions like, "Do you really need this? How often are you going to make waffles? You know how much work this is?" I ordered a waffle iron.

And what can I say - I ate 4x waffles in one weekend! The first time the smell of freshly made waffles wafted around my nose, I was blown away.

However, we must not forget the huge amounts of calories, fat and sugar that come with classic waffle recipes. That's where the flab grows fast. No thanks! An alternative is needed.

Healthy waffles, in which one renounces household sugar, white flour and Co are the solution for the problem.

What you need to know about baking healthy waffles

First of all, you should equip yourself with the equipment. You need

  • a good waffle iron
  • a mixer or whisk
  • various fruits as toppings
  • Spices like Cinnamon* or cocoa
  • Appetite!

A really good waffle iron

The most important thing is, of course, a good waffle iron. Here I would not save, because if you get a good iron, everything goes easier from the hand.

Thanks to the coating you also do not have to clean the iron every time, because the waffles can be removed from the iron without leaving any residue and in one piece!

Never use too much dough. I still make this mistake regularly after more than half a year. Therefore, to be on the safe side, put a kitchen towel, paper towel or a board under the waffle iron. This saves a lot of work if the batter spills over.

And it certainly will when you make healthy waffles for the first time.

 

Whisk or mixer for waffles?

Both are possible. When whisking, your strength is needed. The dough should finally be without lumps and nice and smooth. However, you also have an arm workout :)

With the blender it is faster and easier. You can choose for yourself one of the two variants. The result is the same.

For many recipes - especially those that work with yogurt or fruit puree, you only need the whisk. The mixer is usually only used when beating egg whites to egg whites.

Healthy waffles: the basic recipe

Most recipes follow the same pattern and make 2 servings (2-3 waffles). At the beginning you always need to preheat the waffle iron - this takes two to three minutes and coat the waffle iron with a little oil - suitable for this are canola oil or Coconut oil* very good.

  1. Put the liquid ingredient (egg, water or yogurt) in a bowl and whisk it
  2. Stir in powdered ingredients such as flour, Baking powder*, protein powder
  3. Mix liquid and solid ingredients
  4. Add milk or other liquid
  5. Stir in spices

Good to know: The dough should be thick. So that you can pour it from the bowl into the mold. Not too liquid and not too solid - similar to pancakes.

Fill the waffle iron to about 50 % - too much and everything swells over the edge during baking (still happens to me constantly 😅). Depending on the size of the waffle iron, that's a 1/2 to 3/4 filled soup ladle.

Now close the waffle iron and wait about 4 minutes until the waffles are lightly browned. In between, just enjoy the wonderful aroma.

Now you can lift the waffles out of the iron - works great with a spatula. Garnish your waffles with your toppings such as cream, fruit or similar. And then: enjoy! We warned you: these waffles are addictive!

What you need:

Preparation:

  • Whisk the egg in a bowl. You don't have to beat it, just whisk it until the egg whites and yolks are combined.
  • Pour with milk.
  • Mix Coconut flour*, wholemeal flour and Baking powder* in a bowl. Stir the mixture into the milk and egg mixture. Do not be alarmed: Coconut flour* draws out a lot of liquid and will ensure that the dough immediately becomes a little firmer.
  • Melt the Coconut oil* in the microwave and stir it in.

Banana waffles

You need:

  • 1 ripe banana
  • 2 eggs
  • 2 heaped tablespoons spelt flour
  • 1 TBSP. Almond flour*

Preparation

  • Peel the banana and mash it with a fork until a pulp is formed.
  • Stir in the egg with a whisk.
  • Lift spelt flour and Almond flour* mix in. Mix the ingredients until you have a smooth mixture.
  • Pour the mixture into the waffle iron and bake the waffles.

Preparation:

  • Whisk the egg in a bowl.
  • In a second bowl, mix together coconut flour, protein powder and buckwheat flour. Stir in the baking powder
  • Melt the coconut oil and add it to the egg. Now add the flour mix and finally the milk. Mix the ingredients with a whisk until it is nice and smooth.
  • Pour the batter into the waffle iron and you're done!

Waffle with yogurt

What you need:

  • 1 egg
  • 100 g Greek yogurt
  • 150 g spelt flour
  • 1 TBSP. Erythritol*
  • 1/2 tsp baking powder
  • 25 ml mineral water with sparkling

Preparation:

  • Separate the egg and beat the egg white with a mixer until stiff.
  • In a second bowl, mix yogurt, flour, Erythritol*, baking powder, mineral water and egg yolk. Mix the ingredients thoroughly.
  • Fold in the beaten egg whites at the end.
  • Put the batter in the waffle iron.

Vegan waffles

What you need:

  • 100 g wholemeal flour
  • 1 tsp baking powder
  • 125 ml vegetable milk
  • 40 g applesauce
  • 1 tablespoon coconut oil
  • Pinch Cinnamon*

Preparation:

  • Mix flour and baking powder in a bowl.
  • Whisk together milk, applesauce and coconut oil.
  • Mix the dry and the wet ingredients together and lift Cinnamon* under.
  • Let the dough rest for 5 minutes.
  • Heat the waffle iron and bake the healthy waffles.

Spicy waffle recipe with vegetables

What you need:

  • 2 eggs
  • 100 g wholemeal flour
  • 80 g natural yogurt
  • 25 ml water
  • 200 g grated zucchini
  • 1/4 bell bell pepper diced
  • 1 tomato diced
  • 1/2 clove garlic
  • Salt and pepper

Preparation

  • Mix flour, eggs, yogurt and water in a bowl. Let the dough stand for 5 minutes.
  • In the meantime, prepare the vegetables. Grate the zucchini and salt them. Put them aside for 5 minutes and then squeeze out the excess water with your hands.
  • Chop the bell bell pepper, tomato and the garlic clove.
  • Stir the vegetables into the batter. Season with salt and pepper. If you like, you can also add curry powder.
  • Grease the waffle iron and bake the healthy waffles.

But before that, let's take a quick look at what makes healthy waffles different from classic ones.

Replace white flour

Everyone should know by now that white wheat flour is unhealthy. It makes you fat, is mainly responsible for ravenous appetite and offers no nutrients. On top of that, it makes us hungry again quickly and causes blood sugar levels to skyrocket.

In short, healthy waffles should not receive white flour.

You can replace it with whole wheat flour. Or use spelt flour instead of white flour. Protein powder is also used in some recipes.

If you want your waffle batter to turn out healthy, table sugar has no place in it any more than white flour. Classic white sugar has a reputation for being fattening and addictive. It is said to promote various diseases such as type 2 diabetes.

The fact that it is responsible for tooth decay cannot be denied either. Sugar has a lot of calories and does not provide any useful nutritional value. So it's worth it if you replace it. Low-calorie waffles should always be without table sugar.

The healthier alternatives are:

Especially fruit that is no longer so fresh can be used very well in many recipes. Homemade applesauce (cut the apple into small pieces, boil with a little water and puree) or bananas are the best.

Eggs and milk in waffle recipes

Do we want to replace eggs and milk now, too? No, we don't have to. Eggs are considered healthy. If you don't have any at home or can't tolerate them, then you can use Replace eggs with applesauce as easy as pie.

Milk and yogurt can stay in the recipes. If you like, you can use a plant-based milk alternative. Especially delicious for savory waffles: oat milk. Almond milk goes wonderfully in sweet waffle recipes because it naturally brings a sweet note.

When it comes to dairy products, I can recommend Skyr and Greek yogurt - they are much creamier and firmer than classic natural yogurt, which makes the dough taste juicier and gives it an extra load of protein.

As you can see, you can easily substitute animal products when you feel like it. That's why I love homemade waffle recipes so much. You're flexible throughout and can customize them quite easily.
