Yes, you can of course also use frozen berries. But it tastes better with fresh fruit. At least half should be fresh fruit. So you get the most intense color together. From a purely color point of view, frozen berries are more beautiful.

Both are allowed and work well. However, raspberries contain a relatively large number of seeds. That's why I remove about half of the seeds. However, I leave a few in the ice cream mixture.

When I once left all the seeds in the ice cream, it was still very pithy. When licking it scratchy on the tongue. Now I press about half of the berries through a fine sieve and am very happy with it :)

Ingredients
 

  • 500 g Raspberries 50:50 fresh and frozen
  • 100 g Erytrith
  • 4 EL Lime juice
  • 1 EL Lime zest
  • 200 g Cream

Anleitung

  • Puree the raspberries with a food processor or smoothie maker to a very fine puree.
  • Bring the raspberry puree and erytrith to a simmer in a small saucepan, stirring constantly until the erytrith has dissolved. Put the mixture in the refrigerator and let it cool.
  • Pass the puree through a fine sieve. This works best with a spoon. You don't have to put the whole puree through the sieve. Half of it is enough. A few seeds are perfectly ok.
  • Add the lime juice. Grate the zest from the lime and add the zest.
  • Whip the cream until stiff and fold it into the puree.
  • Put it in the ice cream maker. After about 30 minutes, the raspberry ice cream is ready.
