Ingredients
 

The low carb cake base

  • 70 g grated almonds
  • 25 g Birch sugar
  • 30 g Butter
  • Cocoa powder - amount according to your mood not mandatory

The cream for the cheesecake

  • 100 ml Cream
  • 200 g Cream cheese
  • 4 EL Greek yogurt
  • 1 TL Lime zest
  • 1 TL Wheatgrass
  • 60 g Birch sugar
  • 1 EL Gelatin powder

Anleitung

  • Melt the butter in a saucepan.
  • Mix the almonds and birch sugar together.
  • Stir in the butter and mix everything together with a spoon.
  • Press the dough into the cake pan. The best way is to use your fingers. Press as firmly as possible. Otherwise the dough will crumble later.
  • Place the base in the refrigerator for at least 20 minutes.

For the cream

  • Whip ¾ of the cream until stiff. Put it aside.
  • Blend cream cheese, yogurt, lime zest, and birch sugar until you have a nice even mixture. Stir in the wheatgrass. Alternatively, you can just use food coloring.
  • Mix the remaining cream with gelatin. And now with the cream cheese mix.
  • Carefully fold in the whipped cream.
  • Pour the cream on the cake base. Put the no bake cheesecake in the refrigerator for 4 hours.
  • Carefully remove the cake from the mold. Done!
