By the way, the recipe is so simple that I now bake the rolls with buckwheat flour simply by feel. You'll feel the same way after the third time at the latest. You can't do anything wrong.

The idea to bake from buckwheat rolls I came the other day when I bought a buckwheat bread. That must also go in mini format and without yeast. If you do without yeast when baking, you have the great advantage that you can immediately put the dough in the oven.

Buckwheat roll without yeast

You don't even need a mixer for this recipe. I simply stir the dough together with a whisk in a bowl.

And what I particularly like about these buckwheat rolls is that the order of the ingredients doesn't matter at all. Simply pour everything into a bowl, stir, fill into molds and bake.

Fold in nuts, seeds, kernels and you're done.

Ingredients
 

  • 25 g Hazelnuts
  • 25 g Pumpkin seeds
  • 250 g Buckwheat flour
  • ½ Pack Baking powder
  • 1 TL Cornstarch
  • ½ TL Salt
  • 25 ml Rapeseed oil
  • 250 ml Mineral water

Anleitung

  • Preheat the oven to 180° top-bottom heat.
  • Chop hazelnuts and pumpkin seeds.
  • Mix them with the buckwheat flour, baking powder, cornstarch and salt in a bowl.
  • Now add canola oil and mineral water. Mix the dough with a whisk or mixer until smooth. Do not be surprised: The dough is quite sticky.
  • Prepare the muffin tray. If you want to get the buckwheat buns out of the pan more easily, you should use muffin paper.
  • Fill 2-3 tablespoons of batter per muffin tin. The dough should be flush with the tray.
  • Bake the rolls for 25 to 30 minutes.

How you can refine the rolls

Buckwheat already has a relatively intense and nutty flavor. Nevertheless, buckwheat flour can be refined with many delicious ingredients

Oh dear, you made too much? The rolls are quite filling, so it can happen that something is left over. But don't worry. You can still eat the rolls 3 days after baking.

Keep them in a bread box. After the third day they begin to harden. If you want to prevent, then you should freeze the excess buckwheat rolls. They are the perfect size to be defrosted later.

Simply put the rolls in a bag or a Tupperware box with a lid. Put them in the freezer.

If you like, you can bake them again very briefly after defrosting or put them in the microwave to make them lukewarm and fluffier.
