The blanched almonds go into the oven at 120° hot air or 150° top and bottom heat. Spread them well with your hands for this and keep a good eye on them!
When the almonds are ready after 5 minutes, let them cool briefly. Now fill them into the food processor.
Start with the food processor on the lowest setting. Run for at least 15 seconds.
The result is a nut flour with a few larger pieces. Pause for 30 seconds.
And again start at the lowest speed. After 30 seconds, turn up until a uniform mass is formed (about 60 seconds). Press the nut mass from the side of the blender to the blades.
Pause for at least 30 seconds.
After three to four passes, the almond paste is ready.
