Why you should make strawberry sorbet yourself
Normally, a lot of household sugar ends up in sorbets. But that doesn't have to be the case.
Because making strawberry sorbet yourself also works without sugar. And that saves mega many calories. Since we replace the household sugar with Erythritol* only the calories from the strawberries remain in the recipe.
For comparison: 100 gram Erythritol* contain 0 calories, 100 grams of household sugar contain 410 calories.
With a homemade sorbet, you get a total of 28 calories for 100 grams. If you take a sorbet in the supermarket, you are at least 123 calories.

If you want you can Erythritol* through Birch sugar* (Xylitol*) can be substituted. In contrast to household sugar Xylitol* only half the calories and, more importantly, it doesn't harm our teeth.
What you absolutely need is a powerful Blender*. This makes a really fine syrup. If pieces remain in the sorbet, it only tastes half as good and somehow it gets in the way of eating. Alternatively, you can also use a food processor.

- Squeeze the lime and add the juice as well.
- Puree the strawberries with a blender until you get a very fine juice. The less pieces you find in it, the better it is.

How often you need to stir when making strawberry sorbet yourself
If you don't have an ice cream maker, you have to stir the sorbet regularly. The best way to do this is with a fork. Why? If you don't, the sorbet won't be light and fluffy, but a hard block of ice.
You need to stir at least every 2 hours and repeat the process 3 times.
Your sorbet will be ready faster if you use a mold that is flat and large. If the strawberry syrup does not get so high, it will start to freeze faster.
If the strawberry juice is only about 3 cm high, then it goes fastest. You can even stir for the first time after 30-45 minutes.
You can also make your own strawberry sorbet faster if you don't put a lid on the box. If you have herbs, onion and Co in the freezer, then it can happen that the sorbet absorbs the smell. I recommend you then instead of the lid to pull a cling film over the box. Works wonderfully!

How to refine your DIY sorbet
If you like, you can stir a little mint into the finished strawberry sorbet.
For the end of the day or the barbecue party, it's really delicious if you stir 100-150 ml of sparkling wine to the 250 grams of pureed strawberries and then freeze the mix. Yummy :)
Also very tasty: If you Erythritol* and lime for a homemade elderflower syrup. The best way to do this and how to mix the syrup with Birch sugar*, which I have recorded in another article.

Or you can also combine fruits. Raspberries go very well with strawberries. However, you should press them through a sieve so that the seeds do not end up in the sorbet.
In short, you can let off steam as you please. However, I have made the experience that recipes with few ingredients taste best.
And, of course, they are much faster to prepare, which gives them an extra plus.
Our conclusion
If you want to make your own strawberry sorbet, you don't have to use sugar. It also goes healthier and lower in calories. With Erythritol* or Birch sugar* the recipe works just as well, you won't notice any difference.
Enjoy! :)
