Why you should prepare strawberry jam with birch sugar

Super about the recipe is that you can do without refined sugar. Birch sugar* (also Xylitol*) can replace household sugar 1:1.

But tastes completely the same. And Xylitol* has an antibacterial effect - therefore also against tooth decay.

Also has Birch sugar* compared to 40 % fewer calories. And is even suitable for diabetics.

Xylitol* It is also said to lower blood sugar levels. Digestion is also said to be stimulated - a big plus point is that it prevents hunger pangs.

However, the preparation of strawberry jam with Birch sugar* a little more expensive than with conventional household sugar. But what can you do for fewer calories and better health? :)

How does jam with birch sugar taste?

Birch sugar has a similar sweetening power as household sugar. It has a slightly cooling effect in the aftertaste. Some people describe it as refreshing and minty. In jam, there is no difference in taste - the fruit usually overpowers the sugar. But in combination, the strawberry jam tastes a little fresher and somehow slightly cooling.

A distinction is made between conventional birch sugar and birch gelling sugar. The second variant helps you to cook jam, because the gelling agent is already added. However, it is not mandatory that you use gelling agent. Even without it, the jam will gel if you let it cook long enough.

Caution: If you have never eaten birch sugar, you might get a stomach ache from large amounts of jam. Xylitol* can have a laxative effect in large quantities. But you really have to eat a lot of it - at least 250 grams of pure jam.

What ingredients do I need for jam with birch sugar?

Here I'll quickly tell you a few little things about the ingredients. You should read this if you are making strawberry jam with the sugar substitute for the first time.

Strawberries

I recommend you to take fresh and ripe strawberries from the market. They are sweeter than store-bought frozen strawberries. If you don't have time to make jam in the summer, you can also freeze berries from the market or from the garden. I have not had such good experiences with frozen berries, the jam was usually quite sour and I needed more sugar.

It is very important that you take really ripe berries, because otherwise it can happen that the Jam discolored brown after time. This does not change the taste, but visually it is not an eye-catcher. In addition, the taste is not so fruity.

The sweeter the fruit, the better the jam tastes. If you like, add a handful of raspberries.

Gelling sugar or conventional xylitol?

My jam is prepared without gelling agent (pectin). It is slightly more liquid than conventional jelly.

But at the same time that makes them very versatile. So I use them for example as a strawberry sauce for my homemade strawberry ice cream or as a topping for waffles and pancakes. From classic sugar you can also make a make delicious strawberry syrup.

If you prefer the jam solid, then reach for Gelatin birch sugar*. It already contains pectin and ensures that the jam gels - i.e. becomes firm like the fruit spreads from the supermarket.

You can also add gelling agents by hand.

Strawberries naturally contain a small amount of pectin, you need to cook the jam longer so that the excess water evaporates, then the jelly will also become solid.

Vanilla

Strawberries and vanilla harmonize wonderfully with each other. But also to apricot, blueberry, raspberry and Co vanilla fits quite wonderfully. With me it may be missing in pretty much no jam with birch sugar.

I use real vanilla and not flavoring because you can taste the difference.

Important: Also, you should have the glasses ready - of course thoroughly washed out and sterilized beforehand. Best suited medium sized jars with screw caps*.

Thus, the homemade jam with strawberries will keep longer and fresh.

Strawberry jam with birch sugar

The homemade strawberry jam with birch sugar is not quite as solid as that from the supermarket. This is because there is no pectin.

Ingredients
 

  • 600 g fresh strawberries
  • 120 g Xylitol
  • 1/2 Vanilla bean
  • 1/2 TL Citric acid (optional)

Anleitung

  • Wash the strawberries thoroughly and remove the stem. Drain well. Large strawberries can be halved or quartered.  
  • Then place in a saucepan and heat, stirring constantly.
  • Add birch sugar and citric acid. And now half the vanilla bean scraped out.
  • Bring the mixture to a boil while stirring. Now reduce the heat slightly and continue to simmer until the jam thickens (about 50 minutes).
  • The jam is ready when it passes the jelly test. To do this, simply remove a little jam and put it on a plate. When it has cooled and the consistency seems okay, then the strawberry jam with birch sugar is ready.
  • Now fill the contents into clean and sterile jars. It is best to preheat them a little. The jar should not be filled to the brim. Close well with a sterile screw cap so that a vacuum is formed.

Notes

The recipe yields about 700 grams of jam. It is best if you use small jars. Once the jars are opened, you should use them up quickly. Otherwise there is a risk of mold!

How long does jam with xylitol last?

Jam with birch sugar will keep for a year if you work cleanly and store it properly. It is best to put it in a cupboard and make sure that it is not exposed to sunlight. A dark and cool cellar is ideal.

Once you have opened the jar, keep it in the refrigerator and use it up as soon as possible. Normally the jam is made with Xylitol* now has a shelf life of 14 days.

Remove the strawberry jelly with a clean spoon and do not bring any impurities into the jar if you want to enjoy mold-free.

About the jars: They have to be really really clean already when you fill them. So you have to wash them out really well before filling. The best way is with very hot water and washing-up liquid.

Then rinse well and dry. And then, to be on the safe side, put them in the oven. Heat the glasses for about 10 minutes at 140 °. Attention when lifting out!

The lids are first washed with detergent and then placed in a pot of boiling water.

And then, of course, the storage location is also crucial. The jam lasts longest if it is stored in a dark and cool place. So nothing stands in the way of a long-lasting strawberry jam with birch sugar.
