Spinach soup with egg
Ingredients
- 200 g floury potatoes
- 1 small Onion
- 1 Garlic clove
- 1 EL Margarine
- 200 ml Vegetable broth
- 150 ml White wine
- 300 g fresh leaf spinach
- 1 Stiehl Parsley
- Salt, pepper, nutmeg
- 2 hard boiled eggs
- 1 EL Cress
Anleitung
- Peel the potatoes and cut them into small cubes.
- Chop the onion and garlic.
- Heat the margarine in a frying pan. Sauté the onions and garlic.
- Add the potato pieces. And pour vegetable broth and white wine.
- Simmer for 15 minutes until the potatoes are soft.
- Meanwhile, remove fibrous stems of spinach. Baby spinach can be processed directly. Add spinach to soup. Coarsely chop the parsley and add.
- Season with salt, pepper, nutmeg. Put it in the blender. Blend on high speed until the soup is creamy. Peel the eggs, chop fresh herbs. Serve spinach soup with egg and herbs.
