This vegan red cabbage soup with walnuts is very creamy. The blue cabbage soup without cream becomes creamy with potatoes.

Ingredients
 

  • 400 g Red cabbage
  • 1 Onion
  • 1 Garlic clove
  • 0,5 l Vegetable broth
  • 200 g floury potatoes
  • 1 big sweet apple
  • 4 EL Walnuts
  • 1-2 EL Lemon juice
  • 1 Pinch Salt, pepper and nutmeg

Anleitung

  • Wash the red cabbage and cut it into strips.
  • Chop onion, garlic and fry them with a little olive oil in a pot. Add the red cabbage. Fry the ingredients for about 5 minutes, stirring constantly.
  • Pour in vegetable broth and simmer the cabbage for about 5 minutes.
  • Meanwhile, peel and dice the potato and apple. Add them to the cabbage. 
  • Tip: If you get a bloated belly from cabbage, add a bit of caraway seeds to the soup. This takes away the bloating effect.
  • Let the soup simmer for at least 30 minutes until the cabbage is nice and soft.
  • Grab the blender and puree the soup until it is very fine. Now add the lemon juice.
  • Toast the walnuts in a pan without oil. And sprinkle them on the soup. Meal! :)
