For the compote

  • 250 g Rhubarb
  • 50 g Strawberries
  • 1 EL Lemon juice
  • 2 EL Water
  • 2 EL Coconut blossom sugar

For the crumble

  • 80 g Whole spelt flour
  • 20 g Oatmeal
  • 100 g Coconut blossom sugar
  • 100 g Soft margarine
  • 1 TL Cinnamon

Anleitung

Prepare the compote

  • Preheat the oven to 180°C convection oven.
  • Wash the rhubarb and pull off the hard fibrous strings.
  • Cut the rhubarb into 1-2 cm pieces. Cut the strawberries and mix the rhubarb with strawberries, a tablespoon of coconut blossom sugar, the water and the lemon juice in a small pan.
  • Cook the mix for 3-4 minutes. Then put the rhubarb compote aside.

The crumble

  • Mix flour, rolled oats, coconut blossom sugar, margarine and cinnamon in a bowl.
  • Mix the ingredients with your fingers or a fork until the consistency is nice and crumbly.
  • Grease a baking dish with a little margarine.
  • Spread the rhubarb pieces in the mold and sprinkle the dough on top.
  • Bake the crumble for 20 minutes at 180° C convection oven. It tastes best when the crumble is allowed to cool for 5-10 minutes.

But attention: Cardamom* is very flavorful. Do not use too much of it.

If you really want to indulge, grab some yogurt, a scoop of vanilla ice cream or warm vanilla sauce. Yummy!

But we prefer to leave household sugar aside. It is unhealthy, harms the bikini figure and the teeth.

Unfortunately, the rhubarb crumble is not completely without sugar. The rhubarb is slightly acidic.

In this recipe instead of table sugar I used Coconut blossom sugar* used.
