Ingredients
 

  • 2 EL Chia seeds
  • 200 ml Milk
  • 120 g Rhubarb
  • 120 g Strawberries
  • 1 EL Lemon juice
  • 1 Piece Vanilla bean
  • 2 EL Birch sugar
  • 1 EL Cornstarch
  • 1 Mug Greek yogurt optional

Anleitung

  • Mix the chia seeds with the milk and set aside. Stir them every now and then.
  • Wash the rhubarb and cut it into pieces about 3 cm thick. Peel only very thick stalks that are very fibrous.
  • Quarter the strawberries and mix them with lemon juice.
  • Cut open the vanilla bean with a sharp knife and scrape out the pulp. 
  • Add the vanilla and birch sugar to the rhubarb with 1/4 liter of water. Cook the rhubarb for 4 minutes over medium heat.
  • Stir the cornstarch with 3 tablespoons of cold water until smooth. Add the cornstarch to the rhubarb. Initially it is milky cloudy and then during cooking the starch slowly thickens.
  • Take the pot off the heat and stir in the strawberries.
  • Let the rhubarb pudding cool down a bit. In the meantime, your chia pudding is as good as ready.
  • Fill the rhubarb grits, chia pudding and yogurt alternately into dessert glasses.
