Fancy a really fine autumn-winter dish? Today we have beet carpaccio with goat cheese, nuts and arugula. My absolute favorite dish in the cold months.

For a long time I have not eaten beet. And if, then at most as a salad. Two years ago I really got a taste for it and love to experiment with the red tubers.

Its tangy, salty flavor complements the earthy flavor of the beets and is a pretty awesome contrast in color, too. You have several options. Either you opt for fresh goat cheese, goat cheese in a roll, or feta.

For me, nuts can not be missing in autumn dishes. They are not only delicious, but also enhance the recipe with their vegetable fats. Especially walnuts go very well with the cheese and beets. But of course you can also use other nuts.

The walnut is the only nut with a significant omega 3 fat content. Put them on your menu more often!

Otherwise, I was able to find plenty of thyme in the garden, which went straight into the recipe. And you know what? He fits so incredibly well to the beet carpaccio with goat cheese and nuts, that I could hardly believe it at first. I was really very positively surprised by this mix.

You can go wild with the dressing. I keep it pretty classic for time reasons: apple cider vinegar, olive oil and a little orange juice.

Ingredients
 

  • 4 EL chopped walnuts
  • 2 Handful Arugula
  • 1 Apple
  • ½ TL Lemon juice for the apple
  • 4 Tubers precooked beet
  • 150 g Goat cheese
  • 6 Stems Thyme
  • ½ TL Honey
  • 1 EL Apple cider vinegar
  • 3 EL Olive oil
  • Salt and pepper to taste

Anleitung

  • Very important: First put on disposable gloves :) Otherwise you can look forward to red fingers and nails.
  • Fry the walnuts without oil in a pan. They should get a little color, but beware: they burn very quickly! Take the nuts out of the pan and put them aside.
  • Wash the arugula and chop it if necessary.
  • Cut the apple into thin slices with a vegetable slicer. Sprinkle it with a little lemon so that it does not turn brown. Now slice the beet with the vegetable slicer. Arrange the beetroot and the apple in a circle on the plates.
  • Put the arugula on the plate. Sprinkle the walnuts on top.
  • Crumble the goat cheese with your fingers and sprinkle it on the carpaccio.
  • Pluck the leaves of the thyme. Mix them with honey, apple cider vinegar and olive oil to make a dressing. Add it to the beet carpaccio. Finally, add a little salt and pepper. That's it!
