I'm not a fan of low temperatures. The only thing I like about it is that there are lots of delicious soup creations.
From classics like pumpkin soup or a clear vegetable broth with noodles to red cabbage soup, I'm partial to anything that warms me up.
Today a quick fennel soup lands on the table. Mixed with potatoes and leeks, it brings color into the gray everyday life. And has a calming effect on the stomach.

Potato fennel soup *vegan*
Ingredients
- 1 Onion
- 2 Toes Garlic
- 1 Fennel
- 1 Handful Leeks
- 400 ml Water
- 1 EL Vegetable broth
- 150 g floury potatoes
- Salt, pepper and nutmeg to taste
Anleitung
- Chop the onion and garlic and fry them in a pot with a little olive oil.
- In the meantime, chop the fennel and leek. The more green leaves you take from the leek, the more beautiful your soup will be! In terms of taste, however, it makes'no difference.
- Add fennel and leek to pot. Sauté briefly. Add water and stir in vegetable broth.
- Peel the potatoes and cut them into small cubes. Add them to the soup. Put the lid on and simmer gently for 15 minutes.
- Puree the soup and season to taste with salt, pepper and nutmeg.

The less water you use, the thicker the soup will be. If you are unsure, use a little less water at the beginning.
You can dilute the potato fennel soup at any time. But once it's too thin, it's difficult.

What makes this potato fennel soup vegan and so special
The ingredients make the soup vegan. But it is much more than just vegan. It is alkaline, or rather alkalizing.
This is a good idea if you want to deacidify your body. It gets sour from lots of animal foods, sugar, white flour, alcohol, nicotine and especially stress.
To take it easy on our bodies and bring them back into acid-alkaline balance, it helps to have a few detox soup days.

That's why I mentioned earlier that you should use less liquid for the soup at the beginning. Because once it is too liquid, it will be difficult.

You can freeze the fennel soup with potato
Made too much again? Simply fill the soup into a Tupperware box and put it in the freezer.
Since the potato fennel soup is vegan, you can easily defrost it at any time and enjoy it fresh. It tastes like freshly prepared.
In the refrigerator, however, the soup also keeps easily 3-4 days. Just wonderful if you do not use animal products or?
Take them to work
Put it in a jar with a tight cap and you have a healthy and quick lunch for work or university.
