Ingredients
 

  • 800 g Frozen spinach
  • 1 Piece Onion
  • 4 Piece Garlic cloves
  • 1 Can peeled tomatoes
  • 2 TL Tomato paste
  • 1 Pinch Salt and pepper
  • 1 Handful fresh basil
  • 2 EL Parmesan
  • 1 Pkg Mozzarella
  • 3 medium size Zucchinis
  • 1 TL Parsley
  • 1 TL Oregano
  • 3-4 EL grated cheese

Anleitung

  • Preheat the oven to 180
  • Squeeze the thawed spinach to get rid of the excess liquid. Put it aside.
  • Chop the onion and garlic. Fry them in a pan with olive oil.
    Add the peeled tomatoes and tomato paste. Add salt and pepper.
    Cover the sauce and let it simmer for 15 minutes.
  • Take the sauce off the heat and add the basil, spinach, oregano and parsley.
  • Cut the zucchini into slices. Dab them with kitchen paper and place them on a baking sheet. Put the zucchini slices in the oven for 5 minutes. Take them out of the oven when the liquid has evaporated. With this step you prevent the lasagna from becoming too liquid.
  • The first layer is the tomato sauce. On top of it you put the first layer of zucchini.
    Now comes a layer of mozzarella. And then the parmesan.
    And then again tomato sauce and zucchini. The last layer is the tomato and spinach sauce. On top you sprinkle grated cheese.
  • Bake the vegetarian zucchini lasagna for 30 minutes. And then another 10 minutes covered with baking paper.
    Let the vegetarian low carb lasagna stand for 10 minutes before serving.
