Do you know low carb zucchini lasagna or spaghetti? I love pasta more than anything. If only there weren't so many carbohydrates in it. Fortunately, there is now this alternative! Try low carb zucchini lasagna or spaghetti.

I have tested low carb zucchini lasagna and spaghetti for you and cooked. Now I understand the hype around these two low carb dishes :)

What is low carb?

Low carb is a form of diet in which you completely eliminate or reduce your carbohydrate intake. Foods such as pasta, rice, potatoes and bread are therefore actually taboo.

The daily meals in a low carb diet actually consist mostly of fish and meat, as well as dairy products and vegetables. The fats and proteins replace the omitted carbohydrates.

Now a little excursion into history. The low-carbohydrate diet actually dates back to the 19th century. It became known through the Englishman William Banting. According to his own statements, the meat-emphasized diet helped him to lose weight at that time.

How low carb zucchini spaghetti taste like

Simply heavenly! I did not think it myself at the time that zucchini noodles can taste so great. I tried them for the first time about 3 years ago. At that time I wanted to quickly lose 1-2 kg in a healthy way before the bathing season.

I found then by chance a spiral cutter on the Internet and set to work. First I tried the zucchini noodles only with normal tomato sauce and mozzarella. Gradually, I tried again and again to find new sauces and sugos for the zucchini noodles.

A hot tip is to refine the zucchini noodles with a chanterelle sauce. Sounds strange, but tastes simply heavenly.

The more you replace the zucchini noodles with regular noodles, the less you taste the difference. I can't explain why, but that's just the way it is.

How to make zucchini noodles?

First of all, you need a spiral slicer, which is available from various brands and you can use it for other types of vegetables.

You take a medium sized zucchini, and slice it with the spiral slicer.

Choose the number of zucchinis according to your needs and hunger. Then put a little extra virgin olive oil in a pan and heat it.

Then you add the zucchini spirals and fry them for a few minutes, then you pepper and salt the "pasta" and add a sauce of your choice. You will see, it will taste really great.

A particularly great zucchini noodle recipe I would like to present to you now.

Zucchini noodles with shrimps

For 4-6 people you need:

  • 500 gram shrimps
  • approx 65g onions
  • 60 ml olive oil
  • 2 garlic cloves
  • about 400 grams of cherry tomatoes
  • 1 tablespoon red pepper
  • 20 g butter
  • 15 g basil ( best fresh)
  • 3 zucchini
  • 1 lemon (only the juice of it)
  • White wine for deglazing

Here's how:

For the preparation of this recipe you need about 20 minutes. At the beginning, defrost the shrimp. Then start cutting the zucchini into strips. Cut the onions in the same way. Peel the garlic clove and chop it very finely.

Then put 30 ml of olive oil in a frying pan and start heating it on medium heat. Add the thawed shrimp to the pan and season with salt and pepper.

Fry the shrimps for 2-3 minutes on each side until they are slightly pink. In the same pan, sauté the onions until they are translucent. Then add the garlic and sauté for 30 seconds.

Use white wine to deglaze the pan. The drippings are then loosened with a spatula. Then you stir it and mix it in.

After that, wash the tomatoes and add them to the pan, where you fry the remaining ingredients. Cover the pan and let all the ingredients simmer for 3-4 minutes, the tomatoes should burst and become soft.

Then cut a lemon into halves. Then wash the basil and chop it. Then add the shrimp, lemon juice, basil and butter. Mix the ingredients until the butter has melted.

Now heat 30 ml of olive oil, preferably in a coated pan and on medium heat. Now add the zucchini noodles and sauté them for about 2 minutes. Then quickly remove them from the pan.

Low carb zucchini lasagna with cottage cheese

What you need:

  • 250g zucchini
  • 80g parmesan (grated)
  • 200g curd
  • 1 egg
  • a pinch of salt, pepper
  • some basil
  • some cayenne pepper, paprika spice
  • 1 tsp olive oil
  • some pine nuts
  • some breadcrumbs

Here's how:

You start by preheating the oven to 175 degrees. You should also have a baking dish at hand. Cut the zucchini lengthwise into thin and long slices.

Take 80 grams of Parmesan cheese, cottage cheese and egg, mix well and season with salt and pepper. You wash the bunch of basil, cut it finely and stir it in.

If you want your lasagna a little spicier, season it with cayenne and paprika bell pepper.

Coat the bottom of the baking dish with olive oil and then layer the quark mixture and the zucchini slices. In between you can always season a little. The top layer is the quark mixture.

Cover the rest of the lasagna with round slices and a few pine nuts and add some Parmesan cheese and breadcrumbs.

Bake at 175 degrees for about 45 minutes. Then take your low carb zucchini lasagna out of the oven and enjoy it with a fresh salad.

What you need:

  • 1 kg large thick zucchini
  • 500 g minced meat (beef)
  • one thick clove of garlic
  • 1 large onion
  • one can of tomato (cut into pieces)
  • 100 ml milk
  • 1 package cream cheese
  • n. B sour cream
  • 1 tablespoon tomato paste
  • 150 g cheese, grated
  • Olive oil
  • Oregano
  • Thyme
  • Salt, pepper
  • Parsley
  • Paprika, sweet

Here's how it's done:

Wash the zucchini and cut them lengthwise into finger-thick slices. In a frying pan, fry the zucchini in olive oil on both sides. Then drain them on paper towels.

Cut the onion into cubes and sauté them in a little olive oil until they are translucent. Squeeze the garlic cloves and sauté them as well. Also add the minced meat and fry it until crumbly.

When the meat gets some color, season it with salt, bell pepper and paprika powder. Then add a tablespoon of tomato paste, stir and let everything sweat a little.

Now add the tomatoes and season with oregano, thyme, salt, bell pepper and paprika. Simmer everything together on low heat for 10 minutes. Finally, add the chopped parsley.

Now mix the cream cheese with milk and you can also stir in sour cream. Season everything with salt, pepper and nutmeg. But then stir in about 50 g of sprinkled cheese.

Then take a baking dish and start lining it with zucchini slices.
You then spread a few spoonfuls of tomato mince sauce on top of that, then another layer of cream cheese sauce and so on.

You layer until all the ingredients are used up. The top layer is the tomato sauce. Sprinkle the top layer with the remaining cheese and then bake the lasagna in a preheated oven at 200 degrees for about 30 minutes. After the time in the oven your low carb zucchini lasagna should be perfect. Let it taste good:)
