Ingredients
 

  • 125 g Coconut flour
  • 60 g Birch sugar
  • 200 g Butter
  • 4 Eggs
  • 1 Pkg Baking powder
  • 10 EL Coconut milk
  • 2 EL Baking cocoa

Anleitung

  • In a mixing bowl, combine the coconut flour with the birch sugar.
  • Beat the soft butter with eggs until fluffy
  • To the butter and egg mixture add cinnamon, baking powder
  • Mix in the coconut flour and the birch sugar
  • Finally, incorporate the coconut milk into the batter.
  • If it is too dry for you, you can add more coconut milk.
  • Divide the dough into two halves. For one half add baking cocoa
  • Pour the batter into the muffin tin with paper cups
  • Bake the low carb muffins with coconut flour for about 30 minutes at 180°.

Notes

PS: The dough is firmer than usual muffin dough. This is because coconut flour binds a lot of moisture.
