3 ingenious recipes for muffins without sugar
If you like to bake yourself and pay attention to few carbs, then you will find many more recipes in the Happy Carb Cookbook . To be precise, there are 150 low carb recipes that are really delicious. The inspiration for the muffins I also have from the book. The book is by blogger Bettina Meiselbach, who herself is an enthusiastic low-carber and has thus lost 60 kg.
But even if you do not want to lose weight or do not eat low carb permanently, the book is worth a clear recommendation. You will find a lot of variety and what I like so much: recipes that can be prepared quickly.

Low carb muffins with coconut flour
Ingredients
- 125 g Coconut flour
- 60 g Birch sugar
- 200 g Butter
- 4 Eggs
- 1 Pkg Baking powder
- 10 EL Coconut milk
- 2 EL Baking cocoa
Anleitung
- In a mixing bowl, combine the coconut flour with the birch sugar.
- Beat the soft butter with eggs until fluffy
- To the butter and egg mixture add cinnamon, baking powder
- Mix in the coconut flour and the birch sugar
- Finally, incorporate the coconut milk into the batter.
- If it is too dry for you, you can add more coconut milk.
- Divide the dough into two halves. For one half add baking cocoa
- Pour the batter into the muffin tin with paper cups
- Bake the low carb muffins with coconut flour for about 30 minutes at 180°.

When they are cooled, there's a few coconut sprinkles on top. :) Meal!
They taste best very fresh with a cup of coffee. But even two days after baking they still taste very juicy. The taste of coconut and cocoa harmonizes wonderfully. I am sure you will love them!
