We bake a low carb cheesecake without bottom and sugar! And in fact in Guggelhupfform. This cheesecake recipe is a real eye-catcher and tastes incredibly delicious.

Are you in the mood for a little variety and want to snack healthily? Then you should definitely try our recipe for low carb cheesecake.

What is special about it? Our cake has no bottom - therefore no carbohydrates and no sugar.

What makes a regular cheesecake an unhealthy and huge calorie bomb? The sugar.

And the flour that is in the bottom. These are not only fatteners - they are not even necessary for a juicy cake with cottage cheese.

So that our Low carb cheesecake really sweet looks, we pack it in small Guggelhupfformen. This way, the quark cake is perfectly portioned for finger food and the highlight at every party.

It can be served through the mold with fresh fruit of all kinds or a homemade fruit bar.

Low carb cheesecake

When it comes to ingredients, we keep it simple. After all, who wants complicated and time-consuming? Exactly. :)

Our low carb quark cake differs from others by the extra large portion of protein. This is on the one hand in the curd, in the eggs and in the vanilla protein powder. Perfect for athletes and all who want to get started with sports.

Also for those who just want to lose weight, the recipe is perfect. Because protein keeps you full for a long time and helps build muscle. Eating only cake without sports - that will not work. So: Reward yourself after training with our low carb cheesecake.

Ingredients

  • 400 g Low-fat curd cheese
  • 2 Eggs
  • 1 TL Baking powder
  • 60 g Protein powder (vanilla)
  • 2 EL Lemon zest
  • 1 Pinch Salt

Anleitung

  • Preheat the oven to 170° top and bottom heat.
  • Put the ingredients in a large mixing bowl. Mix them with the mixer until you have a nice homogeneous cream.
  • If you like, you can sweeten a little with birch sugar. Since protein powder is inherently sweet, we have the low carb cheesecake not additionally sweetened.
  • Spread the curd dough evenly in the silicone molds and put them in the oven for 15 minutes. Depending on the size, it's of course possible to go faster or take a little longer.
  • Take the low carb cakes out of the oven and let them cool for 5 minutes before removing them from the pan.

You can, of course, pour the batter for the low-carb cheesecake into a regular cake pan. That is entirely up to you.

The cheesecake can be stored in the refrigerator for 3-4 days. Just put it in a tupperware box so the curd cakes do not dry out.

Low carb cheesecake with red fruit jelly

Vanilla and quark harmonize really well with berries. If you want to enjoy your Quark Guggelhupf, it's best to top it with homemade red fruit jelly. The advantage: The fruit sauce is sugar-free and ready in just 2 minutes.

Mini low carb cheesecake without base and sugar

Grab a small package of frozen berries and put them in a pot with a little water. Boil the berries and add a little honey. Done. :)

It tastes best when the red fruit jelly is still warm and poured over the cheesecake.

Our conclusion

Low carb cheesecake without base and sugar but with a large amount of berries - a dream in mini Guggelhupfform! The advantage of the small size is that the curd dough is baked very quickly. And provides you as an athlete with a lot of protein.
