Kaiserschmarrn is a real classic among desserts. In the Summer he is after the Hiking one of my favorite dishes.

After several meters in altitude, you deserve it. The calories just melted away. The fact that it's swimming in butter, covered in a huge mountain of sugar and made with white flour doesn't bother me much at this moment. 🤤😋

But what does it look like at home? Well, the tasty dish can quickly start to stick to your hips. Over 400 calories are contained in just 100 grams. And let's be honest: who eats just 100 grams of it? Certainly not me.

There must be another way. And lo and behold: It works, of course!

I'll show you how to prepare a healthy Kaiserschmarrn. It only takes a few small steps to turn the Calorie bomb a healthy dish to conjure up.

You definitely can't say no to this mega delicious and fluffy Kaiserschmarrn.

To make the Kaiserschmarrn healthy, I rummaged a bit in my store cupboard and experimented. This version is much healthier and can no longer hold you back from your bikini figure. 😅

What ingredients make your Kaiserschmarrn healthy

Before we get started, I'd like to say a few words about the ingredients. After all, I want you to know what you're eating.

Kaiserschmarrn is usually only known in the form of flour, eggs, milk and lots of sugar. But not this time, because this time we have come up with a healthier version for you that is just as delicious!

For this recipe, you'll need a few ingredients that you can buy on Amazon or get at a health food store:

Oatmeal Kaiserschmarrn

If you want to prepare Kaiserschmarrn in a healthy way, you shouldn't do without oat flakes. Oatmeal has many benefits for our body and should be on the menu much more often.

They provide strong nails, shiny hair and beautiful skin.

They also make you long full and let the Blood sugar level only rise slowly. Your nutrient balance is healthy through and through.

The small flakes contain many Dietary fiber for healthy digestion. On top of that, you will find a whole range of minerals such as magnesium, phosphorus, iron and zinc.

This recipe is enough for two people.

Ingredients

  • 2 eggs
  • 1,5 TBSP. Coconut blossom sugar*
  • 1 pinch salt
  • 150 g blueberries
  • 125 g milk
  • 40 g spelt flour
  • 40 g fine oat flakes
  • 2 tsp rapeseed oil
  • 1 teaspoon powdered sugar (powdered sugar made from Birch sugar*)

You will also need: a tall container, a hand mixer, 2 mixing bowls, a spatula, a large non-stick frying pan and 1 spatula.

1. separate the eggs

To separate the eggs, you will need the two mixing bowls. Gently crack the egg against the bowl or a hard edge so that you have two halves of the shell.

Then, carefully slide the yolk from one half to the other half so that the white runs out of the egg shell into the mixing bowl.

Once all the egg whites are in the bowl, you can add the yolks to the other bowl.

2. beat the snow

In the next step, we beat the egg whites until stiff.

Switch the mixer to the highest setting and add half of the sugar and the salt, stirring constantly.

Keep beating until you get a firm, nice shiny mass and the amount has visibly increased.

Set the beaten egg whites aside.

When we prepare Kaiserschmarrn healthy, blueberries can not miss. Wash the blueberries thoroughly. Drain them in a colander and then carefully pat them dry with a paper towel.

However, do not soak them in water. Do not wash frozen berries as this will wash away all the flavor.

Weigh out the spelt flour and rolled oats. Mix them together with a spoon in a bowl.

Grab the bowl with the egg yolk.

Stir in the remaining coconut blossom sugar and add the milk.

Mix the ingredients properly with the mixer. Let the dough rest for about 10-15 minutes.

6. mix the ingredients together

In the next step, we fold the beaten egg whites into the batter. The folding ensures that the beaten egg whites remain nice and fluffy.

Take the spatula to hand. It is important that when folding in the delicate ingredients, you always put them on top of the rest of the mixture and not vice versa.

Using lifting motions, the spatula is then used to pull the dough from the bottom of the bowl over the beaten egg white. It can be helpful to turn the bowl during this process.

Do not fold in all the beaten egg whites, but work in batches.

Now you should have a mega fluffy dough in front of you, ready to be baked.

7. prepare Kaiserschmarrn healthy

Finally, add the oil to the coated pan. Turn the stove on to medium heat.

Wait until the oil is warm and pour all the batter into the pan. Sprinkle 2/3 of the blueberries on top.

After about 3 minutes of baking - or when you see the dough starting to firm up, it's time to flip.

To do this, grab a spatula and try to turn the Kaiserschmarrn whole. If that doesn't work, it's not so bad.

Chop the Kaiserschmarrn into small pieces with a spatula and fry until lightly browned.

Serve hot from the pan and sprinkle with powdered sugar.

How can I refine Kaiserschmarrn?

In the refrigerator, the Kaiserschmarrn remains edible for 3 days. If you still can't make it by then, put it in the freezer. You can defrost it quickly in the microwave - but be careful with a lid, so that the blueberries do not make a mess 😅.

  • Let the pancake bake over medium heat for about 4 minutes, until the bottom is set.
  • Turn the pancake and let the mass continue to cook. Pluck the dough into two pieces.
