A weekend without cake? Yes, that is possible. But somehow something is missing :) Even those who eat healthy, may sometimes snack.

That's why today we have a delicious Pear tart with lavender recipe. Because with us the pears pile up to the ceiling. According to Pear pureepears in muesli and smoothie, we are running out of ideas.

An absolute classic among recipes with pears is and remains a juicy pear cake.

By the way, the combination of pear, cake and lavender owes the recipe to a French film.

The romantic comedy is called "pear pie with lavender" Abstract: endless lavender fields, hot summer days. Coffee table under pear trees and lo and behold: there is delicious pear pie with dried Lavender flowers*.

At the latest after the film you also get desire on our Pear tart with lavender recipe :). Because it looked so great in the movie, we just have to try it. And lo and behold, it's anything but difficult.

By the way: You can also replace the pears with apples!

Ingredients for the pear tart with lavender recipe

But we don't have a conventional recipe with cream, sugar and co. We bake ourselves a Cake with pears of the somewhat different kind. Namely healthy. At least so healthy as a cake can be just. :)

For this, only a few small changes are necessary. With a few simple steps you can transform pears, lavender and flour into a delicious cake.

Exchange household sugar for honey

Purely in terms of taste, honey goes much better with pears than normal sugar could. But since the pears are very sweet, we don't need much of it anyway. Who wants can also Birch sugar* use.

And to balance the sweetness of the honey and pears serves a little lemon juice.

White flour versus wholemeal flour

White flour does not have a particularly good reputation. That's why we turn to wholemeal flour. You won't taste the difference. But you will feel it.

This is because whole grain flour contains many important nutrients that are no longer present in white flour. It also makes you feel fuller for longer and ensures that blood sugar levels do not rise as much.

Butter in pear tart

However, we remain faithful to the butter. It makes the pear tart juicy and delicious.

So for vegans this pear cake with lavender recipe is unfortunately not suitable. But this is also due to the egg that we pack into the cake. And also honey is strictly speaking not vegan.

Lavender flowers in cake with pears

What distinguishes this cake from a conventional pear cake are the Lavender flowers*. You don't need much of it.

Just 1 teaspoon is enough for a tart pan. So that they give off their flavor properly, soak them in warm honey. This is then spread with a brush on the finished tart. It completes our pear tart with lavender recipe!
