First of all, it's important that you get the right cucumber. Because unlike its relative, the cucumber, you need a thick and rather smaller cucumber for the braised cucumber recipe.

But there is not only a visual difference. Braised cucumbers are not suitable for eating raw. They are not poisonous, but they simply don't taste good. Braised cucumbers are firmer and less watery. As soon as they are turned into a delicious recipe, their true flavor unfolds.

Whether you choose braised cucumber with salmon or with minced meat, the important thing is to remove the skin. It is hard, thick and tough. The seeds must also come out.

With only 12 calories per 100 grams, braised cucumbers are great for light cooking.

What ingredients do I need for the recipe?

Before we get straight to the recipe, let's take a look at the ingredients you need for braised cucumbers with salmon. I'll tell you what you need to look out for when choosing the ingredients and what alternatives you can use.

Cucumbers

We have just clarified that. I'd just like to add one more thing: if you don't have braised cucumbers, you can also use field cucumbers as an alternative.

The situation is different with snake cucumbers: they are not suitable for cooking because they become very mushy when heated. However, you can use them to make a delicious iced cucumber soup.

Sour cream

Why should you use sour cream instead of normal cream? If you're looking for a stewed cucumber recipe, you'll find many that are made with cream.

I use sour cream. That saves a lot of calories. With 100 grams of sweet cream, you get over 300 calories. Sour cream contains just 120 calories.

But you are welcome to use both.

Especially in summer, when cucumbers are in season, I like to avoid excess calories. After all, I don't want my bikini figure to be spoiled by this cucumber recipe. 😁

Overall, sour cream tastes fresher and is not as heavy on the stomach as the sweet version.

Salmon

Salmon has a pleasant flavor that makes the cucumbers stand out. If you add bacon or minced meat, the sauce will taste like nothing else.

Don't have any salmon at home? Then feel free to use any other fish. A good substitute is trout, for example - it has a similar texture and a mild taste. Pieces of trout absorb the flavors of the sauce very well. Trout is therefore ideal for a braised cucumber recipe without mince.

Alternatively, you can also use cod. The white fish has a firm texture and a mild taste. It harmonizes well with the spices in the sauce - especially in combination with dill, it is unbeatable.

I haven't tried it yet, but I can imagine the mixture of cucumber with shrimp and scampi very well.

Dill

A cucumber dish without dill? That's just not possible! Dill, cucumber and salmon complement each other wonderfully.

The herb can also have a positive effect on our health. Dill is used as a remedy for loss of appetite and insomnia. It is also used for stomach and menstrual pain and flatulence.

Someone recently asked me if you can use frozen dill instead of fresh. Yes, you can do that without any problems. Because dill retains its flavor when frozen.

I would only not use the dried ones. It has hardly any flavor of its own, which means that the stewed cucumbers also lack that certain something.

Spices

We need onion and mustard. All these ingredients round off the recipe and bring a delicious taste to the plate.

I didn't have any mustard at home the other day. It's amazing what that small amount can do. I can tell you that you should definitely not go without mustard.

The onion adds a roasted flavor to the recipe. Pepper and salt round off the dish.

Recipe: Braised cucumber with salmon and sour cream

Here you will find the recipe for braised cucumbers with fish. It's aimed at anyone who doesn't have much cooking experience or doesn't cook very often. I explain step by step how to proceed and what you need to pay attention to.

Ingredients:

  • 300 g braised cucumbers
  • 1 onion
  • 2 tablespoons olive oil
  • Salt and pepper
  • 100 ml vegetable stock
  • 100 g sour cream
  • 300 g salmon fillet
  • 3 tsp mustard
  • 1 bunch dill

Also: board, knife, spoon, pan with lid, second pan.

Prepare the cucumbers

Wash and peel the cucumber. Cut it in half lengthwise.

Remove the seeds with a spoon.

Cut the cucumber into slices about 2 cm thick.

Peel the onion. Dice it and add it to the pan with the olive oil. Fry the onion and cucumber pieces in the pan.

Season with salt and pepper.

Prepare the sauce

Pour in the vegetable stock. Reduce the temperature and allow the cucumbers to simmer gently for about 5 minutes.

Add the sour cream and mustard. Stir well and continue to simmer - put the lid on the pan.

Fry the salmon

In the meantime, let's take care of the fish. Wash the fish fillet and pat it dry. I like to use salmon with the skin on because it becomes crispy when fried.

Cut the fish fillet into cubes.

Add a little olive oil to the second pan. Fry the salmon. Only turn when the cubes are at least halfway pink.

If you turn too often, the pieces of salmon will fall apart.

When you have browned them well on all sides, add them to the cucumber pieces and leave the mixture to stew briefly.

TipYou don't have to fry the salmon pieces. You can also add them raw to the cucumber. But then the roasted flavor will be missing from the recipe and it will be a little milder overall.

If you decide not to fry the fish, add the raw cubes to the cucumber sauce, put the lid on the pan and leave the dish to simmer for 5 minutes.

Serve

Now the braised cucumbers with salmon are ready!

If you like more bite on your plate, you can stir a few freshly sliced pieces of cucumber into the hot sauce.

How long can the dish be kept?

It tastes best fresh. But reheating is also no problem.

If there is any left over, leave it to cool at room temperature. Then put it in an airtight container that you can seal. Store it in the fridge. This will keep it fresh for up to two days.

If you want to keep it for longer, you can freeze it. Put it in a freezer bag or a suitable tin and label it with the date. After defrosting, I mix in a few pieces of fresh cucumber to give it more bite.

Braised cucumber: serving suggestions and finishing touches

Because you always eat with your eyes, I've collected a few tips and tricks for you here to make the recipe really delicious.

  1. Arrange on the plate: After you have prepared the stewed cucumbers with salmon dish, take a nice plate. First place a layer of the braised cucumbers on the plate. Then carefully place the tender pieces of salmon on top. If you like, you can also serve a whole, freshly roasted salmon fillet.
