Buns, jam, honey - not again! Time for something different. How about a cornmeal porridge? If you like this idea, then you've come to the right place.

Here comes a step-by-step guide to make your breakfast porridge. Simple, delicious and healthy - that's how breakfast should be.

By the way, in case you're wondering, corn grits are also called polenta.

Polenta can be prepared sweet or savory. Today we have a sweet breakfast with applesauce and, if you like, with fresh fruit.

What speaks in favor of preparing corn semolina porridge

I love warm breakfast. Mostly in the form of porridge or a spelt semolina porridge. Both can be combined with lots of fruit or if you like it spicy, also with vegetables, cheese and herbs.

But recently I have discovered cornmeal porridge for myself. It is wonderfully creamy and a great alternative for a healthy breakfast. And for those who do not like the taste of corn: The porridge hardly tastes like corn. :)

Incidentally, corn grits used to be considered a poor man's food and animal feed. Today, it is on the menu at many top restaurants. And rightly so. Because polenta is very healthy.

Corn semolina makes you full, provides micronutrients such as potassium, beta-carotene, phosphorus and magnesium.

It can be prepared in many ways, sweet and savory. You can use it in pizza, with fritters, in bread or as a side dish. It is a great alternative to rice, pasta and the like.

If you do not tolerate gluten, then polenta is optimal for you. Corn is completely gluten-free.

What topping to go with the sweet polenta porridge

Sweet or savory, how would you like it? Since the porridge ends up on my breakfast table, I prefer it sweet. Here come some wonderful ingredients to give your polenta porridge a personal touch:

fresh berries such as raspberries, blueberries or blackberries,

  • Strawberries or cherries,
  • Bananas,
  • Plums,
  • Applesauce or pear puree,
  • Coconut flakes,
  • Nuts such as hazelnuts, walnuts or almonds,
  • Vanilla, cocoa, Cinnamon*,
  • Jams - very tasty: strawberry and apricot.

How to prepare a porridge of cornmeal

Are you hungry yet? Then let's get started right away. Here you can find a long version for the polenta recipe with step-by-step instructions. If you've made porridge before, you can find a short version at the end of the post.

This recipe is enough for two people.

Ingredients

  • 1/2 vanilla bean
  • 250 ml oat milk
  • 50 g corn semolina
  • 4 tablespoons applesauce
  • 1/2 TSP Cinnamon*
  • 1 TBSP. Cocoa powder*
  • 1 tsp beet powder

Also: a pot, two bowls and a whisk.

1. boil the milk

Scrape out the vanilla bean.

Boil the vanilla pulp with oat milk. You can of course also use another vegetable milk or normal cow's milk.

If you decide to use cow's milk, stir the milk occasionally so it doesn't burn. Vegetable milk has never burned for me, but it can't hurt to stir it as well.

2. add polenta

When the milk boils, add the cornmeal.

Take the pot off the stove top, put a lid on the pot.

Let the semolina swell for 10 to 12 minutes. I put it back on the stove after about 3 minutes, when the plate is no longer so hot.

The base for your cornmeal porridge is ready. Now it's about the sweetness and the color.

3. color the polenta porridge

Divide the porridge into three equal pieces.

One part remains original and is not refined, you can leave it in the cooking pot.

We color one part of the cornmeal porridge red and the other brown.

For the brown Polenta porridge you take Cocoa powder*. Namely Baking cocoa*, it provides a slightly tart note and brings a beautiful color.

Give a tablespoon Cocoa powder* to the semolina and stir until you have a uniform color.

The pink Polenta porridge is made with Beet powder colored. However, you only need a little of it. It dyes very intensively. Try it at first with half a tablespoon and slowly increase the amount until you get the desired color.

Instead of the beet powder, you can also use fresh strawberries, raspberries or blackberries.

4. sweeten and season the cornmeal porridge

I use only applesauce for sweetening. It is very easy to stir in and brings natural sweetness to the porridge.

Try a tablespoon of applesauce and taste the porridge. If it is too little for you, you can add more.

If you wish, you can sweeten the porridge additionally. For this purpose are suitable:

  • Honey
  • Agave syrup*
  • Jam
  • Birch sugar*
  • Erythritol*
  • Household sugar - I would not recommend, however, because it quickly makes the healthy breakfast very unhealthy.

And at the very end comes Cinnamon* to. Half a teaspoon is enough here. You can either mix it into all three colors of porridge or stir it into the applesauce.

5. arrange the porridge

How do you get such a beautiful spiral pattern in the cornmeal porridge? It looks very artistic, but it's really easy.

  • Add two to three tablespoons of the yellow paste to the bowl.
  • Then 2-3 tablespoons of the red porridge, then the brown and so on.

Later, it looks as if the porridge is in a spiral. In fact, it is simply several layers.

And after that it is best to eat right away. The porridge tastes best when it is lukewarm. It goes well with a cup of coffee, cocoa or tea.

Anleitung

  • Scrape out the vanilla bean and add it to the milk.
  • Boil the milk in a pot. When it starts to bubble, add the cornmeal.
  • Let the semolina swell for 10 to 12 minutes on the lowest setting.
  • Mix applesauce and cinnamon and fold into the cornmeal.
  • Divide the mass into three equal parts. To one part you add cocoa, to the other beet powder and the third you leave pure.
  • Prepare the porridge and add a little applesauce on top. Done!
