Ingredients
 

  • 130 g Carrots
  • 20 g Apple
  • 5 Eggs
  • 80 g Honey
  • 100 g Coconut flakes
  • 100 g Wholemeal flour
  • 1 TL Baking powder

Anleitung

  • Preheat the oven to 180° top and bottom heat.
  • Peel and finely grate the carrots and apple.
  • Beat the egg whites until stiff. Beat the egg yolk and honey until foamy.
  • Mix flour and baking powder before folding into the egg yolk and honey mixture.
  • Now add carrots, apple and grated coconut. Fold in carefully.
  • Finally, fold the beaten egg whites into the cake batter. Pour the batter into the muffin tin.
  • Put the coconut muffins with carrots in the oven. After 20-25 minutes they should be ready. Let the muffins cool and then decorate them with carrot pieces and coconut flakes. Done :)
