Make coconut cream yourself: The preparation
The only downside is that you have to plan well when making coconut cream yourself. Before you can whip the coconut milk into a healthy cream, the can must be refrigerated for at least 24 hours.
If you need to do it quickly, you can also put the can in the freezer for an hour. Attention: Do not forget it!
There is coconut milk with which this does not work so well. You will see this immediately when you open the can. If the solid part of the coconut milk and the liquid part have not separated from each other, you do not need to try any further.
You can't make cream with light coconut milk either. It simply lacks the fat that we need for whipping.
We have tried it with different. In the photo at the bottom of the coffee you can see the cream that worked well. And with the berry dessert's not worked well. But does not matter, tastes anyway :)
The bowl in which you whip the cream also goes into the refrigerator. It is best to use a metal bowl.
However, normal whipped cream must also be cooled. So this disadvantage is put into perspective again. If you always put coconut milk in the fridge right after buying it, you don't have to think about it. Problem solved :)

Vegan coconut cream
Ingredients
- 400 ml Coconut milk chilled
- 1 TL Birch sugar or other sugar
- 1 TL Guar gum
- 1 Pinch Salt
Anleitung
- Put the can in the refrigerator overnight. Put the whisk from the blender in the refrigerator as well. Carefully remove the can from the refrigerator. Do not shake!
- See the solid coconut fat at the top quarter of the can? That's exactly what we need for the coconut cream.
- Remove the solid coconut fat with a spoon. Leave the milky liquid in the can, you can use it later for cooking.
- Put the coconut oil with sugar and guar gum in a tall container. I use a measuring cup.
- Beat the mixture with a mixer at medium speed for about 2 minutes. And then again at full speed for 5 minutes.

Of course, you can still refine the coconut cream. Very tasty are vanilla flavoring, a vanilla bean, honey, Cinnamon*, Cocoa powder*, Agave syrup*Coconut flakes, Birch sugar*rice syrup, stevia, almond flavor.
If you want to replace the cream in a recipe, you need to pay attention to the amount. As an equivalent to a cup of cream, take 2 cans of coconut milk.
