Ingredients
 

  • 200 g soft butter
  • 1 EL Honey
  • 1 Vanilla bean
  • 3 very ripe bananas
  • 3 Eggs
  • 250 g Whole spelt flour
  • 1 TL Baking powder
  • 30 g Chia seeds
  • 6 EL Milk

Anleitung

  • Preheat the oven to 180°C.
  • First, beat the butter until fluffy.
  • Cut the vanilla pod lengthwise with a sharp knife and scrape out the pulp. Carefully stir the vanilla pulp into the butter cream. Stir in each egg separately.
  • Process the bananas with a fork or blender to a fine pulp. Stir the banana puree into the butter and egg mixture. Add the honey.
  • Mix the flour with the baking powder and the chia seeds and stir into the butter-banana mixture by the spoonful, alternating with the milk.
  • Line a loaf pan with baking paper or grease with a little butter and dust with flour and pour in the batter. Bake the banana bread with chia in a preheated oven for about 1 hour.

Notes

From this recipe you get dough for a small loaf pan. From this you can cut off about 10 pieces of cake.

Chia, bananas & Co.: A few tips at the end

If the bananas are very ripe, the honey can also be omitted. The riper the bananas are, the better the chia banana bread tastes in the end. So feel free to use the dark, spotty bananas, which you might not necessarily eat so anymore.

If the Chia seeds are too expensive (after all, the price is more than 10 € per kilo), you can also go to Flaxseed*. They are just as healthy, but cost significantly less than the small black seeds.
