If you're craving some variety in your spreads, you've come to the right place. Try this vegan liverwurst with kidney beans!

Vegan eating is full boring. I recently had to listen to this statement from a good friend.

Well, she'll be surprised, I thought to myself, and served her a vegan liverwurst. She knew nothing of her good fortune and was then all the more surprised when I let her guess what I had just served her.

She would never have thought of vegan liver sausage made from kidney beans and tofu. The point clearly went to me. Because soon she asked me for the recipe. :)

Of course, I don't want to deprive you of that. I'm sure you'll like it as much as I do.

But wait a minute: how now? Vegan liverwurst?

Can this even work? Can you make sausage without sausage? Yes, you can. Strictly speaking, you can't call it a sausage, but I'll be so bold and do it anyway.

Of course, this vegan version of liverwurst does not taste 1:1 like the original. That is also not possible. It doesn't have to, because it's just a matter of creating something from plant-based ingredients that tastes similar.

You get here a recipe for a hearty spread, similar in color and consistency to a liver spread.

The ingredients for the spread are very manageable. Tofu, beans, spices and herbs. In the food processor, the ingredients are simply mixed until they reach the desired consistency. And that's it.

The vegan liverwust is thus very natural and mega delicious. Unlike the meaty version, it is lower in fat, healthier, free of cholesterol and contains very high-quality protein and complex carbohydrates.

Made way too much? Oh dear. :) If you can't eat that much at once, you should store the spread in a box with a lid in the fridge. So he does not dry out and retains the taste.

If you want to freeze vegan liverwurst, then I have some bad news for you: Unfortunately, it doesn't work well. Because the consistency of tofu changes when you freeze it. It becomes mushy and feels a little rubbery.

The only thing that helps: eat or give away a part.

The veggie spread can be kept in the refrigerator for 4-5 days.

How you can refine vegan liverwurst

The other day I saw tofu with olives in the supermarket. It was not smoked tofu, but conventional tofu, this I have then turned into vegan liver sausage. For this I have simply omitted the olives from the recipe above and made everything else the same - that was also really tasty.

Optional ingredients for even more flavor

  • Yeast flakes
  • Garlic
  • Paprika powder
  • Chili powder
  • Vegetable broth
  • Smoked salt
  • Apple cider vinegar
  • Thyme
  • Lentils instead of kidney beans
  • Nutmeg

What side dishes go with veggie liver sausage

So with liver sausage may not be missing for me simply pickles. The sweet and sour taste fits perfectly with the marjoram. Also very tasty to the spread harmonizes very thinly sliced onion.

And anything else that tastes good is allowed. From bell peppers to radishes, cucumber to carrots, pretty much anything goes with vegan liverwurst. If you're a big salad fan, arugula or a leaf of green lettuce also make a good spread.

I prefer to eat vegan liverwurst on a dark whole wheat bread. This brings out the smoky flavor of the tofu and spices best.

Our conclusion

If you prepare your liverwust vegan, you save a lot of fat, cholesterol and other unhealthy ingredients. The veggie spread is ready in no time and will even convince meat eaters. Good luck and enjoy it!
